1. NOMAD FAMILY HOME IN DARKHAN
MONGOLIAN BREAKFAST
MILK TEA: Boil water and add black tea leaves, wild tea, fresh cow milk, and add salt. Mix with a ladle. Filter milk tea to separate tea leaves and store in a thermos.
BOORTSOG (Fried dough): Prepare flour dough by mixing flour, milk, sugar, yeast, and milk grease together. Let it rest. Cut the dough into smaller portions & shape it into pieces. Prepare a hot pan and add animal fat then fry and turn around until it is brown.
KHAILMAG (Carmalized Clotted Cream): Heat the Urum, add flour, and mix. Add raisins and sugar then mix. Remove the fat layer for use in the next dish Zambaa. Make Urum (clotted cream) from the boiled milk after removing the first layer after it’s been laid for 24hrs.
ZAMBAA (Barley dough): Prepare barley flour and add the fat from Khailmag, then add sugar. Squeeze in the shape of one hand.
AARUUL: Wet curd is stored in a fabric sack. Pressure it using a heavy stone. Let it dry and drain out water for some days. Use string to cut it into many sticks. Let it dry outside (air dry) for months, until it is tough.
GOAT BOODOG: Heat the stone. Make a careful slit in the goat and remove all the internal parts. Insert metal string which will be used to tie the goat after stuffing. Trim the meat inside the sack. Prepare potatoes and onions. Stuff meat & veggies inside the sack. Add hot stones and layer with meat. Season with salt & black pepper. Tie the sack. Shake to evenly spread the stones. Use a blowtorch to burn hair and scrape it off. After, wash the sack. Use blowtorch for 4 hours until cooked. Apply a raw fat layer on top of the boodog and blowtorch it, then wait until it is melted. Then spread the fat around.

    I grew up in Inner Mongolia before leaving China and was so excited to see this series being made! Mongolian cuisine puts emphasis on the freshness of meat and dairy products. Their way of cooking goat, lamb and cow is truly unparalleled in the world. I hope you enjoyed every bit of dairy, meat and alcohol you tasted in Mongolia.

    @@mujunansimichael7378 well because nomadic lifestyle is no joke and full of physical labors. With that amount of livestock you will need to prepare your body and mind to endure summer heat and winter cold. Just sit back for a moment and you will risk wasting so much. It may look like those animals just take care of themselves but it is not. Some may get lost or stolen some may become a prey to other predators. It is not only about taking care of the animals it is also about taking care of the nature and the ecosystem. The reason behind these people always moving is because when you stay too long in one place the nutritional value of grass and other plants are decreases for every night you stayed there. And if the soil gets trampled it will get harder for all these plants to regenerate. Mongolian nomadic people doesn’t waste anything from the animal they make a bunch of different products even its poop used as a fuel for heating and cooking. Shearing, grooming, leather crafting, watering, cleaning, every steps are manual labor. So it is like working out in a gym while getting paid. Oh and not one bit of all these food are processed. And like in the saying “with great power comes great responsibility” with great livestock comes great physical activity 😜

    Its funny because I follow Artger too lol. But this country is so beautiful, I can just imagine that the air is amazing. And when you think that the nomadic society of Mongolia once ruled most of Asia, and you connect this to the history, it makes it even more interesting. I would love to visit one day

    I am happy to see more Mongolian stuff on this channel. I love the fact I started watching this channel because of the Vietnamese food and culture, and I watch Artger because of Mongolian food and culture with aim to visit both countries. It's great to see the two hook up, though I didn't expect it. And it's weird to not see Nargie be the centre of the show.

    I really came to appreciate the toughness of the Toyota Prius in Mongolia - especially in winter. Those things go anywhere. It's the official car of Mongolia, right-hand-drive, imported used from Japan.

    My brother and I visited Mongolia back in 2018. The people we met were all very friendly even if we just stopped at a random ger (we were curious about their horses and our guide just stopped the car). Also, coming from a tropical country, it was ridiculous how cold it could get at night! We went in October, it was about 27°C midday and -2 at night. We also had a random snowstorm that covered a once green landscape to all white overnight. One of the best countries i traveled to, can't wait to see more of your experiences! PS. I couldn't get used to the sour cheese lol and horse milk liquor was surprisingly yummy

    @@user-zp4de5lq9i we were in the Gobi and the guide said it was slightly early. On the drive back from Dalanzadgad to Ulaanbaatar (cuz flights were cancelled) most of the vehicles hadn't put on their winter tires yet. 🤷🏻‍♀️

    Definitely can't afford a vacation to Mongolia right now but I'm definitely checking out ARTGER! I love the idea of being fully nomadic but I don't think I could live without indoor plumbing lol thank you Sonny (also the cooking technique of the goat, my family used to do with pigs, but since the elders of our family have sadly passed, no one wanted to continue tradition) much love from South GA ❤️
