    This is amazing information! I had no idea freezing could lower the Glycemic index! That is nuts. I am going to find out more about this.

    Yes I also learnt that from doctor madel here on KZread and yes it works, I cook my foods and freezer them and then reheat them up and my blood sugar levels have reduced alot, including sweet potato as well

    Yeah same with letting pasta go cold and reheating. Dont think you have to freeze the pasta though. Something similar with sweet potatoes where theyre more sweet but theyre actually less gi.

    You want low GI bread? Make your own, real sourdough bread: from a starter with 70% hydration (ex: 200 gr flour and 140 gr water). Only use fine ecological wheat in the starter, no rye, no whole flour. When making the dough, use max 25% whole flour, for ex rye, the rest 75% white flour (all organic). Let the mixed dough (mixed by hand, max 3 min) rise at room temp 2 hours, then fold it 20 times and rest 8 more ours at room temp, or basement, in an oiled dutch oven. Then preheat your normal oven to 250 degr c. Put in the dutch with lid. Reduce temp to 210. Leave it 40 min with lid, then 20 min without. And voilà! Extremely low GI bread.

    Apparently you can lower the GI a bit more if you toast it after freezing it.... I wonder if freezing it works with other breads; cornbread, ezekiel bread, sourdough, etc

I need to see how long does it take sugar after starting and finishing meal to start growing. how it grows along time in minutes and hours, when is peak, when we reach after a meal the same level as before the meal. all depending on different food.

    Two slices is very small portion. You need to try with a average meal portion. 2 pieces is a portion for testing. You need to try with atleast 6 pieces which is the normal meal.
