For fun.... Oda doesn't plan ahead as much as people think... but he keeps on pumping out lots of ideas and then uses ones that work.... He even reworked a lot of older ideas he once abandoned and reused them....

Neither will we see any of the other characters' growing, but at least we know they'll probably reach that ages respectively... :') (Well, we'll see with Luffy considering how many years he has spent just with the G2nd or Impel Down's treatment, etc... but he won't die young, prolly, not THAT young).

if you look closely, Luffy doesn't have his straw hat anymore, meaning he became a great pirate and gave it back to Shanks.

If you think about it, it makes sense why when something bad happens it screws up their aging process since it's mentioned that when a character loses sight of their goal, they'll age horribly. Like how big mom did.
