The taste is very rich, with a pleasant sourness. In summer, during the sorrel season, this soup is often prepared, as it is refreshing in the heat and is not heavy for digestion, like ordinary red borscht. We always cook a large pot of green borscht and eat it for two days, and tomorrow it becomes even tastier😍 Fresh sorrel can also be added to vegetable salads, to other types of salad leaves with a neutral taste.
