    1) white wines can be made from red grape varieties. The colour comes from "grape juice" being in contact with the skins. 2) both cabsauvs and sauvblancs can be grown almost everywhere. From South Africa to Germany. 3) depending on the terroir in which the wine is produced the pairing can differ too. French and NZ Sauvignon blancs aren't going to stand up equally well to, say, cheese. If it grows together, it goes together. 4) Steak and cabsauvs are NOT a good pairing. Opt for Shiraz or sangiovese.

And red wines have also different taste depending on the type of grape and the clime and conditions. Maybe one years was more windy, another was more sunny and the next year was more humid. Those wines will taste different from each other. Also the vines are more like clones, that mostly refuse to plant new vines since that will also change the flavors too

I quit drinking alcohol in 1977 but I'll still cook with it. My grandmother cooked for a living and started teaching my 2 siblings and I how to cook when we were in elementary school in the 1960's. I can be unconventional in my cooking style. I use whatever is at hand to cook with. The first time I baked chicken with Cabernet Sauvignon the look on my wife's face said it all. The look she had going back for seconds said even more. I mentioned this one day and some idiot tried to say only white wine goes with chicken YET he had never tried it with another type of wine. The first time I baked chicken leg quarters in brandy and mushrooms my wife really enjoyed it. It was a birthday surprise. I'm not afraid to experiment. I picked up cooking tips from my buddies when I was on active duty and on my tours overseas I like going to mom & pop restaurants where I could watch the cooking so I could learn. I also use a wok...

So, the redness in red wine doesn't actually mean anything about the color of the grape, per se. Redness in wine comes from skin contact with the red grape skins after they have been pressed. This allows for the colors, tannins, and some flavor notes to come out of the skin and into the wine. Rosé is an example where the skin contact is precisely controlled to impart a rose tinge onto the grape juice. You can actually have blanc de noir wine which is white wine coming from a red grape. Great video nonetheless!

Lay the bottle on it’s side (unless it’s a screw cap) to ensure the cork stays moist and maintains a good seal. Proper wine cellar conditions for long-term aging are: 55-65 degrees Fahrenheit, moderate humidity, no direct sunlight, stable temp (no major swings in temp), and no vibrations (not nearly as important as the other conditions but a vibrating wine fridge can cause damage to wines over a long period). If you’re not looking to actually age wines and just want to keep a few bottles around the house, best bet is keep them in the fridge or a cool dark spot like a closet. So often I see people with bottles out in a warm kitchen or in direct exposure to sunlight, good way to ruin a bottle quickly.

Wine and food pairings are sometimes really overrated. There’s no strict rules, white wines can in fact pair well with red meats and red wines can be paired with seafood. The only pairings you really want to avoid is spicy food with dry robust wines like Cab, because the alcohol amplifies the spice and makes for a really unpleasant experience.
