Spatchcock your turkey!!! Spatchcock your turkey!!! I've cooked dozens of 15# ish birds in about 3.5 hours on a Camp Chef pellet grill .... Can't beat it !!!

I'm thinking 3/4 cook in a smoker to get good smoke flavor then lid on in the oil-less fryer to get crispy skin for the last lap.

Great comparison. I have smoked spatchcocked turkeys for several years on a kamado, a kettle and lately on a pellet grill. I love the meat on the pellet grill but am not happy with the skin. Any tips for improving the skin on a pellet grill? How about a comparison of several different "skin crisping" techniques on a pellet grill. A chicken test would be fine, maybe even just a breast test, but we need a reliable method for crisp skin on a pellet smoker.

I would say do a dry brine a couple days in advance. You want to get the skin translucent if you can, that will help ensure it’s crispy!

Frieeeddddd, I’m a skin person lol! Loved watching this, after we had an air fried one this thanksgiving we wont go back to anything else! Not a smoked person, don’t come for me 😩😂

What's your favorite way to cook a turkey?
Have you tried smoking 3/4 through then frying the last 1/4? Matt Pitman (Meat Church) had a video on this, getting the best of both worlds. He deep fried though, not sure how the air fryer would compare. Interesting video though. Smoking my 2nd time this coming Thursday and you've got me scared on the 8 hours, as I'm hosting the dinner as well.

Also, good luck on the smoked bird for thanksgiving this year! It was a 14 lb bird and took 8 hours to get to internal temp, then at least 30 minutes of rest. Maybe try the spatchcock method? That will quicken things up!
Another awesome video! Have you every heard of the "Safeway Two-hour Turkey" recipe? A completely different way to roast a turkey. It's amazing!
