    By far the best coffee place in Amsterdam and in the Netherlands. The coffee they roast is really amazing and the place is so unique because it really feel like a neighbourhood spot.

    Friedhats Brazil are the best beans. Every time we go to Amsterdam we make sure to get a few bottles before leaving. The drive from Belgium is worth it!!

    I’m curious about the freezing the beans part of his café. So the how to store video you guys did a bit ago, the girl that was talking had said specifically not to freeze or chill the beans because of the moisture when the beans come up to room temp. So I’m curious as to why it works for this café to do it? My best guess is it comes down to more personal preference perhaps, or just how they handle the frozen beans as they get them ready to brew

    In order to avoid condensation, you have to vacuum seal them before freezing them. When you take them out, you can use them just like you would fresh beans.

    Jaka Šter would there be a need to get the beans to room temperature before brewing? I’m thinking from a thermal management view, the cold beans would immediately get your brew water much colder than the ideal 200° or 95°

    I'm curious too. I just freezed (finaly) few packs of coffee, few days ago. In a few weeks I'll get them out and try them. Hope it will be ok. I didn't vacuum them even I wanted to... I can update you eith the results :D

    I suppose that EG-1 worked better for espresso brewing and he didn’t want to mix two brewing & grinding styles in one grinder.

    Because we only have one eg-1 and as we’re already using it for espresso, the ek43 gets to deal with the manual brews. It’s fully aligned by Titus though.

    Because every coffee on the menu need to be ground slightly differently for a perfect extraction (=the best possible taste).

    @@CreamyDrummer probably by dialing in, then writting down the setting and grinder used on top of the coffee bag not sure if that is how THEY do it but it seems like a reasonable approach, you could laso have it on your phone/tablet or whatever i went to a small coffee shop recently and the guy pulled a shot of a specific coffee I asked for and he had to pull a second one, which was good but he said it could be better and he gave the shot to me for free (cause i bought some bags), so I guess it's not easy to be super consistent when you have many coffees ideally 1 coffee per grinder for speed and consistency but with time and effort you can have many

    can't speak for them, but the same type of coffee (not the same batch) roasted by them is dialed in more or less always the same way. So it's about remembering the grinder setting for each type. Probably something they know by heart by now (or they can write down somewhere).

    It was comment only about this particular lot. Lex has a chance to roast very special expensive coffee for other people, usually, he can keep a small volume to use at the roastery and cafe. That's why it is priced very conveniently for customers because they don't need to cover the cost or aim for profit. They want to offer customer good experience.
