Thanks for coming back to watch another What's for Dinner video here on my channel. This week I'm sharing 3 meals, but 6 recipes!! We did a lot of cooking and had a lot of fun while we cooked so I hope you enjoy. :)

THIS WEEK'S RECIPES:
SALSA FRESCA CHICKEN: www.eatwell101.com/salsa-fres...
MEXICAN RICE: mandyinthemaking.com/recipes/...
GUACAMOLE:
3 avocados
salt and pepper to taste
1 tbsp garlic powder
juice of one lime
2 tbsp chopped cilantro
3 tbsp sour cream
Combine all ingredients in a bowl and enjoy!!

SUBBIE SUPPER Submitted by Amanda
BOBBY D SANDWICH:
Oil for frying
Thin chicken cutlets
Italian bread crumbs
Egg
Flour
Pepper jack cheese, sliced
Thick cut bacon
Ranch dressing
Shredded lettuce
Thinly sliced onions
Tomato
Good Italian bread (sub length)
STEPS:
Heat oil in pan. Pat chicken dry. Create breading station of flour, egg, breadcrumbs. You know the drill! Fry until golden and place on paper towel to drain.
Fry bacon in strips.
Place chicken on baking sheet. Top each piece with a piece of pepper jack, top with bacon, and another piece of cheese. Bake/broil until melted.
Assemble sandwich: lightly toast Italian bread. Ranch dressing then lettuce (the ranch helps hold the lettuce on the sandwich like glue-that’s the deli experience there!) add tomato, onion, chicken-bacon-cheese cutlet. Yum!
Serve with chips, potato salad, and pickles.
POTATO SALAD:
2.5 lbs red potatoes, chopped (skin on)
2 hard boiled eggs, chopped
8 oz dill relish
1/2 onion, diced
1/2 green bell pepper, chopped
1/2 cup mayo
1-2 tbsp mustard
1/2 tsp sugar
salt and pepper to taste
Boil potatoes for 10-12 minutes until fork tender. Drain and add to a large bowl. Add all other ingredients, mix, cover and refrigerate for at least 3 hours before eating.

    That’s is almost how my grandmother made her’s. But she put her mayonnaise in a separate bowl and she would add pickle juice ,her spices and a little bit of sugar then her very secret ingredient yellow food coloring. My grandmother hated mustard so she used yellow food coloring in that bowl instead of mustard. Everybody in the family thought she had the best mustard potato salad there was and there was not one drop of mustard in it. She did it that way because my grandfather would only eat mustard potato salad. Lol

    Headaches suck sorry..I get migranes and it makes me dibilatated and sick to my stomach..so yea bravo I wldnt be able to do anything but lay there..it doesn't happen alot but when I get headache it turns into that and nothing helps..so I feel you trying to do it. It's like toothache what can you do to make it go away but some you can't..

    Add the tomatoes, jalapeno, and onion to the avocado, omit the sour cream. Cumin, red pepper flakes, salt, pepper, a shake of cayenne, cilantro, lime juice. Adjust to personal taste. Best guac ever!

    I've been watching your channel for about two weeks now after "discovering" it in the middle of April. Couldn't figure out why I like it so much, beyond the good recipes you give us, until just a few minutes ago. It's largely because your channel is so clean---never any unnecessary words (foul language, which I hate), never any kind of meanness, never any kind of criticism of any recipe that's sent in to you. It's just clean, friendly, pleasant---very much as if you consider all of your viewers as friends to whom you want to give good recipes and meal ideas.

    I’m from Texas. Guacamole is so simple to make! Avocados, chopped tomatoes, small amount of onion and salt. That’s it! Simple!

    I have just started watching and see how you are so precise in everything you do. A lot of KZread shows skip slot of ingredients and steps.     LOL I’m the same way. He always offers to help to make it “quicker” but it ends up taking 2-3 times as long because I’m constantly having to explain something or correct something and I just don’t have patience for that in my kitchen 😂

    Right..that's all I've done for about 8 people a night I need a major break..but eating out right now just isn't worth it..I'm in Nashville and the virus has skyrocketed here so I'm not gonna put my family in danger..I go out to the store that's it..

    If you put your jalapeños and tomatoes in your chopper like you did you onion, all your veggies will be even. That’s how my mother in law taught me to do it. She is from Mexico and makes the best pico de Gallo ever!!!

    I'm going to try the salsa fresca chicken. We have no pickles in our potato salad. I use my mom's recipe. Everybody seems to love their mom's potato salad!

    Going to try these recipes because my family loves cheese and I hate it, so I like that I can leave it off on the sandwich one & I think I can make part of the salsa chicken without cheese, too, hoping it still turns out good. That Spanish rice looks amazing, definitely inspired me to make my own rather than buying pre-made

    I can relate to Cole. I developed an allergy to avocados in my twenties. And I love them. Now I have to be more careful because of the use of avocado oil in a lot of foods,

    OMG...I made this for dinner....I added my cilantro to my meat saute, as well as some lime juice and 1/4 tsp of allspice...finished with fontina cheese...did a between so cheese was layered...OMG!!! So GOOD SO KEEPING THIS with my changes...LOVE IT

    I'm not sure if you've tried it or not but when i make potatoe salad almost like yours i mix my mayo and mustard with salt and pepper into a "sauce" then mixit into my potatoes, eggs, and veggies... Just a little tip to maybe help... LOVE YOUR VIDEOS AND FAMILY!!!

    You make Tex-Mex rice. Looks delicious, but I prefer Mexican rice like a Mexican restaurant or from Mexico. Mexican rice, you would only add a half of the can of tomatoes if you are using canned. Omit the chili powder. Add onion, garlic, cumin, salt, pepper, a tablespoon of Knorr chicken bouillon powder, and less tomato. Tex-Mex rice is very tomato like, and Mexican rice is a light pink. Love your recipes and your family!

    Love your videos and appreciate it more so because of your headache. Steven is such great husband and dad.... Cole was so funny getting up and giving you the TD sign and sneaking in the picture.     Love the simplicity of the salsa fresh a chicken and the ground turkey sweet potato skillet. One pan meals are my jam. All of these recipes look delicious Mandy. 😋 Thank you for the inspiration! ❤

    If you want you can take out some of the inside of the bread to have it be a bit smaller and less puffy. I also do it to save a bit on calories sometimes

    If you want your rice tippee extra yummy may I make a suggestion? Go past the translucent stage on the rice until it is brown and toasty. I usually add a little bit of onion while it's toasting but that's up to you. At this point you add a small can of tomato sauce and your spices. 2 cups chicken broth is added next. Bring this all to a boil reduce heat to the lowest setting on your stove and simmer for exactly 18 minutes it sounds funny but it has to be exactly 18 minutes do not remove the lid do not stir the rice do not disturb it in anyway. Once the 18 minutes is up turned the rice off leave it to rest covered for 5 minutes. Then uncover and fluff with a fork it will be the best race you ever had I promise you.!

    I thought the chicken sounded Italian but you made it seem like a Spanish or tex mex meal and I’m glad I’m not the only one who tries to cater to my kids’ likes and dislikes. You and Steven have a great dynamic together. You both are so real. I have a Steve of my own, a big and a Jr. He’s 5 and is the funniest kid. This video had me rolling and I appreciate that when I’m watching videos on here. Keep doing what you’re doing cuz you are loved!! I’m new to your channel but I’ve been catching up! And I love every one!!

    Love watching you and your meal preps! I used to cut avocado that way till I sliced a finger! Lol! 🤦🏻‍♀️ Now I slice it in half, and push the seed out from the skin side and it pops right out!     Here's a suggestion that I heard about from somewhere AGES ago. I tried it and I really liked the results. Super simple. Just after you drain the potatoes while they are still piping hot, toss them around with your favorite kind of vinegar. I like red wine vinegar, but any kind should do. Just use 2 or 3 teaspoons, and the hot potatoes soak it in and it adds a nice subtle tang. YUMMMM.
