Recipes Day 53
BREAKFAST: BREAKFAST POTATOES
Ingredients
2 russet potatoes
2 tablespoons oil
2 tablespoons butter
Salt and pepper, to taste
1 teaspoon garlic powder or garlic parsley
1 teaspoon onion powder
½ teaspoon smoked paprika
Directions:
Peel and cut potatoes into roughly 1-inch cubes. Place potatoes into a pot and fill with water, add about 2 teaspoons of salt and let it come to a boil. Cook potatoes until fork tender. Drain well. In the meantime, add 2 tablespoons of oil into a cast iron skillet and melt 2 tablespoons butter. Add the potatoes and spread to a single layer. Cook on medium heat, do not flip for about 4-5 minutes. Flip then add the seasonings and toss gently. Sprinkle with green onion.
SMOOTHIES: Into a blender, add ½ cup milk of choice, 1 frozen banana, 1 cup frozen strawberries and ½ cup frozen pineapple. Blend until smooth.
LUNCH: DIY SANDWICH BOARD
Sliced French baguette, cucumber slices, tomato slices, lettuce, cheese, Italian deli meat, turkey, mayo and Dijon mustard.
DINNER: PASTA SCAMPI WITH LOBSTER TAILS
Ingredients
10 oz pasta of choice
4 tablespoons butter
6 garlic cloves, minced
Zest of 1 lemon
Juice of ½ lemon
Reserved pasta water
Salt and Pepper to taste
Red chili flakes
Parsley
Parmesan
Directions:
Cook pasta al dente and set aside. Make sure to reserve about 1 cup of pasta water. Melt butter into a pan and add the garlic and lemon zest, this is also where you would add the red chili flakes, if using. Stir and after about a minute, add the pasta and lemon juice. Add salt and pepper to taste. Give it a toss and add some pasta water as needed. Add some parsley and parmesan.
Broiled Lobster Tails
Preheat Broil to High
Using a sharp kitchen scissor, cut the top shell down to the tip of the tail, careful not to cut into the meat. Loosen the meat and gently pull it upward so that it will sit on top of the shell. Sprinkle some salt and pepper on top.
In a small bowl, melt 4 tablespoons of butter, garlic powder, smoked paprika and some lemon juice. I used salted butter, add some salt if using unsalted butter. Stir the brush each lobster tails liberally. Cook in the oven for about 8 minutes, remove from oven then brush with more butter. Enjoy
DESSERT: Lemon and Mango Sorbets
We used store bought brand, but this is a great combo.
