I did not know chipotle peppers were aged jalapeños, I just assumed it was a different variety all together

I'm starting to learn that a lot of different peppers are just the same ones at different stages like this. A lot of people don't realize that even green bell peppers are just red/yellow/orange ones that aren't ripe yet.

@@digitalworkbench Yes but from what I understand, most of the dried peppers from Mexico don' t come from popular 'fresh' peppers. Poblano and Jalapenos are the only 2 I now that are popular in both dry and fresh.

Chipotles are not the only dried chiles. Almost every fresh chile changes its name and profile flavor when it dries: morita, cascabel, pasilla, etc. (Source: I'm a proud mexican procooker :D )

We used to buy our dried peppers around the corner, at a Mexican restaurant. The chef got them from her hometown. The pandemic killed the business, though, so that's over.

Is there a way to make smoked peppers at home, and even indoors? Or anything that could be added to them? I don't know if there is smoke flavor.
@alipennington3764

@@JeffO-you could possibly try something called liquid smoke ? It’s a flavour additive for exactly that, adding a smoked flavour when that’s not available. I’ve used it in a beef jerky marinade before putting it in the dehydrator and it wasn’t quite the same but definitely improved the flavour. I’m not sure if it would would work in this scenario, or if the jalapeño have to be brought to a specific temp before it’s dried, but it would be interesting to see if the liquid smoke would work similarly to the smoking, flavour wise at least.

@@alipennington3764 Thanks. I'll look into it.
I really don’t like jalapeños. They taste like medicine (probably because they aren’t fully ripened red chilies), but I’m pretty fond of red jalapeño sauce my dad has always made.
I love the chipotles in adobo sauce, blend it all up, mix it with sour cream and it goes good on anything.

Using Mexican crema is lighter and let's the chipotle flavor come out more. Delicious
I grew my own jalapenos for the first time this year. They are super productive. Might have to give this a try
Finally someone who gets it right. Ive been getting into smaller commercial pepper growing and some of the misinformation can be frustrating. Even found someone who thought a ghost pepper was a Carolina reaper just cause some packaging said so lol
This was cool! I’d love to see more videos like this one!
I am so so glad to have this information... thank you
I had a vague idea how chipotle peppers were made (I knew they were jalapeños), but it was nice to see the process.
What temp are you smoking them at?
Very interesting to see the process, didn’t know either
I eat chipotles raw all the time some say it tastes bad but my taste buds telling me they taste really good
Today I learned that Chipotle aren't only smoked dried peppers but it's also a restaurant brand. Not what I expected when the question was asked. 😂

What camera do you use to shoot these videos??! Amazing
When I first started gardening I wanted to grow chipotle peppers, and it lead me to this discovery and the. The Smokey flavor made sense 😂
Very informative.ty
You can buy these at the mexican grocery store in a bag and they are no different than what you can grow yourself. There are also some different kinds (not called chipolte) that are smoked waaaay more. Most of those grocery stores will have both of them.
This is awesome thank you
In Sonora you have a climate that lends itself to creating amazing Chipotle and Carne seca ❤
Learned something new. Thanks
Great Chef...😂 you've brought light to EVERONE.. DOBLE CLAP👏👏
Also great on the Chipotle Spud!!
So you leave the seeds in to make the chili powder? I always hated how my fingers got sticky taking them all out.
Fun fact there are two varieties of chipotle pepper: chipotle morita which is dark and fruity tasting and most common in those cans of chipotle in adobo sauce, the other variety is called chipotle meco and is smoked longer until it’s a tan/brown color
They always ask what is a chipotle or where is chipotle. They never ask HOW is chipotle.
This was awesome. Thanks.
If you throw those chipotles in with any meat and stock and slow cook for long enough it always comes out crazy good
I made hot sauce by fermenting smoked (and unsmoked) jalapenos (and habaneros). Does this qualify as chipotle hot sauce? Or does it need to be dried at some point
Yep, I know what chipotle is. Chipotle powder is my fave seasoning! Add it to ranch dressing for a smoky, spicy dipping sauce!
I would love to know about the dehydrator used on this video ,,,,, where can I get that
I know what the famous fast food restaurant is only because of youtube. Turns out 2 European countries outside English speaking countries and one middle eastern country have the famous restaurant everyone guaranteed knows.
great video!
If you wanted to make a dupe chipotle chicken recipe…..I wouldn’t hate it. All the dupes out there (that I’ve tried) just haven’t been right.
I was today years old when I found out a chipotle is an aged jalapeño pepper 😩. I love chipotle peppers.
There are two kinds of chipotle though. Meco and Morita. Very different flavors. Depends when you harvest them.
I had no idea! Thanks for educating us! 🌶️
I didn't know Chipotle was a restaurant chain nor a dried jalapeño. I learned two things today 🎉
Why does it irk me so much when people constantly miss pronounce jalapeño as jala-peeno or hala-peenyo.
Mine turn red without cracking
In the Mexican supermercados it's called a Morita pepper

There are different types, there is also one called chipotle meco which looks completely different. It's a tan color because they smoke it even longer and it feels almost leathery. The smokey flavor is even more intense.
Dude has a Cabela's dehydrator

I just went to a Mexican vender and bought a bag of chipotle peppers for $1. I made some soup out with about 3 peppers. HOT! HOT! HOT!

The Scoville rating usually stays the same, but jalapeños can get hotter when they’re left on the vine longer
I like Morita more than Meco
It's ironic they are named after a spicy pepper, when there is no spice in their food.
