Ingredients list for dinners
Butternut Squash and Chickpea Curry 🍛 😋
Low calorie cooking spray
2 red onions, thickly sliced
1 small butternut squash cut into 2cm pieces
2 corguettes, diced
2 garlic cloves, crushed
1 tbsp medium curry powder
1 tsp dried garam masala
1 tbsp tomato puree
2 x 400g tins of chopped tomato
2 x 400g tins of chickpeas drained
200g spinach
100g fat free Greek yoghurt to serve
Small handful of corriander chopped to serve
Chicken Alfredo
- 4 chicken breasts
- 1 tsp dried mixed herbs
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 250g spaghetti
- 2 cloves of garlic, crushed
- 250ml skimmed milk
- 1 tbsp plain flour
- 4 tbsp light cream cheese
- 20g parmesan cheese grated
- A pinch of grated nutmeg
- 2 tbsp chopped fresh parsley
Beef noodles
- Low calorie cooking spray
- 300g dried noodles
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tbsp cider vinegar
- 2 tap sesame oil
- 1/2 onion, sliced
- 3 garlic cloves, crushed
- 400g stir fry beef strips
- 100g beansprouts
- 2 spring onions, sliced
Prawn fishcakes
Raw prawns
2 sweet potatoes, oven baked and cooked
1 egg
2 spring onions
2 brown bread
1/2 tsp each Garlic & ginger puree
1 lime
Red chilli
1tbsp flour
Sauce
2tbsp yoghurt
1 tbsp Thai red curry paste
1 tsp honey
Handful coriander
1 carrot
1 cucumber
1 tsp rice wine vinegar
Coconut and Lime Chicken curry
3 chicken breasts
Red chilli
4 garlic cloves
2 bay leaves
Ground coriander
Thumb size ginger
1 onion
2 curry leaves
1 lime
Tin light coconut milk
Cornflour
Fresh basil
Broccoli
Rice to serve

Evening, I want to share my good news with you, I hit target and I am so happy. Love your videos and some great meal ideas that I will be trying. I do veggie 3 times a week,the curry looks delicious. Thanks again x

Thank you so much, I'm glad they're helpful :) I don't have a lot of desserts, generally just have yoghurts or the occasional skinny bar or curly wurly x

Hi, they are menu's from some of our favourite restaurants we go to. Whenever we've been lucky enough to do a tasting menu we ask them for the menu and the chef to sign :) I try and do one per year x
