Stinky tofu, also known as chòu dòufu, gets its strong odor from the fermentation process it goes through. The brine used in the fermentation process can include vegetables, meat, shrimp, milk, and tea leaves, and is often exposed to air for months to allow natural microbial fermentation to take place. The fermentation process can take anywhere from a few days to several months, depending on how potent the tofu is desired. Major bacteria strains that contribute to the fermentation process include Bacillus sphaericus, Enterococcus gallinarum, Acinetobacter spp., and Corynebacterium spp. . A 2012 chemical analysis found 39 volatile organic compounds that contribute to the smell and taste of stinky tofu, with indole, the main compound, having an intense fecal odor.

your food court is so big, i'm jealous. Our mall used to be filled with stores back when i moved to the area in 1993, now only half of the stores are still occupied. food court keeps changing as well. Bird's broken glasses are no longer broken, and the music sample was very good.

Hi meimei. The stinky tofu gets it funk from the fermentation they use. The longer it fermented in brine which contain many items such as cabbage, tea leaves, may include meat and shrimp. The longer more funky. Much love ❤. I love all your vlogs and channels

I love the Newark farmer's market. It's one of the few places that sells veggies that are actually cheap and they tend to sell a lot Asian veggies that you don't typically see in supermarkets.

Eataly in L.A. (Century City) has two restaurants, the market, the deli counter, dessert counter, pizza shop/counter and, coffee counter. When you visit Southern CA again, stop by and see how it compares. There is another Eataly in Vegas, as well as NyC and, Chicago.

Love valley fair! It’s getting more and more stores and food. Unlike most malls that are struggling

I've wanted to try the fried stinky tofu with cabbage inside of it for so long. I saw Andrew Zimmern try it when I was a child, 20 years later the dream is still there..

I like the cannoli and the hazelnut chocolate cookies at Eataly. I also get some of the more unique items at their grocery and their to-go salads. The Pizza and Pasta restaurant upstairs is expensive, but I had the Uovo Croccante during a special meal deal week earlier this year, and it was amazing and worth the extra charge. The pastas I had at the Vegas location were always reliable too.

Ooo i would love to see a food tour of all the restaurants at Valley Fair! I feel like Valley Fair has so many good restaurants!

We have Eataly here in Canada as well and it is crazy expensive! Definitely not an everyday thing, but good for a once in a while splurge.

Those Lee’s Coffee concentrate drinks are suuuuuper strong!

The line for that noodle place is always soooo long! Never tried it but want to! Also they have that same gelato place in Italy!

i can't believe the fountain is actually chocolate! the valley fair Eataly is small compared to other locations. the restaurant on the top floor is good though, and it's fun to look at all the Italian groceries.

My favorite at valley fairs gelato place isssss that chocolate hazelnut is my favorite!!!!!!!!!!! So many good options. Just wish valley fair parking wasn’t so crazy lol

@@bookwrm4evr they both have seaweed but one had rice on the outside of the seaweed and the oher had the seaweed as the outside layer. Or at least that's what I think it was. i did also try another frozen one from a Korean store about the same time, so I hope I didn't mix all three up
