What happens during an air interception?
Air interceptions can occur whenever air traffic is flying over or near NATO’s European Allies, and is not in compliance with international aviation rules and regulations. The two NATO Combined Air Operations Centres (CAOCs) detect these activities within the framework of NATO’s Air Policing mission - an enduring peacetime activity conducted 24 hours a day, 365 days a year.
If NATO’s air commanders determine that a plane is behaving unusually or unsafely by flying without an identifying transponder, or refusing to respond to hails from air traffic controllers, they can send fighters to investigate.
Those fighters scramble as quickly as possible to visually identify the aircraft and ascertain the nature of the problem. Often, a civilian or military aircraft has experienced a malfunction leading to a loss of communications. Sometimes, however, NATO aircraft intercept Russian military aircraft that have no flight plan or no radio communications with civilian air traffic controllers.
When this behaviour occurs, NATO jets may launch to visually identify the aircraft and ensure that they are tracked as they pass by NATO airspace.

More likely than you'd think. They aren't just going to hand out the state of the art intelligence data from an advanced targeting array to the pilot. A good old photo camera is cheap, reliable, and command is able to simply review the film to confirm that there's nothing that needs to be confiscated. By comparison, you only get to see GoPro footage from inside planes nearing retirement and widely exported. Nothing from 5th gen or new 4th gen aircraft.

It’s one of the most common interactions, so it makes sense tbh. Flankers. Bears, and the occasional transport/recon aircraft are the most common NATO intercepts, followed by malfunctioning civilian jets and private aircraft.

Bas i nije dobar posao. Toliko je lose, pa je ruski dron preletio tri drzave i pao u glavni grad Hrvatske. Nitko nije reagirao i nitko nije ni odgovarao za to. Nad hrvatskom je bio samo 6 minuta, ali nad drugim drzavama je bio i po sat vremena. Nitko nas nije upozorio i srusio se pored studentskog centra, sva sreca nitko nije nastradao. Zanimljivo kako to skoro nigdje nije preneseno u stranim medijima. Jednostavno svi glume kao da se nije desilo. Sto onda da pretpostavljam? Dali namjerno nije javljeno nama ili??? Jer nad madjarskom je letio oko 45 minuta i zabilježen je na radarima

You didn't address the one thing I was interested in: what happens when the plane being intercepted is unresponsive? Bump it? Fly in front of it disrupting its airflow? Then finally shoot it down?

That depends on what aircraft it is and where it is. Shooting down an aircraft should always be avoided at all costs, because that comes with loss of life and potential dangers on the ground. Generally they will follow the aircraft, especially if it is non military. That was the case with the cessna for instance, that eventually ran out of fuel over the baltic sea. But if its a military aircraft, they would follow it. If it is heading towards any critical infrastructure like a city or other important things, they could be shot down if there is great danger.
