🇹🇭 What Crazy Ingredients Make Thai Food Taste SO GOOD?! (Best Thai Food in Chiang Mai)

'Laap' might be my favorite of all Thai dishes, and in Chiang Mai tonight, at "Witi Laap" Restaurant, we're gonna learn how Thai food can be just SO GOOD - thank you for joining us :)
So, in case you were unaware, there are some crazy ingredients in Laap. If its made in the traditional way, possibly both the cooking style and the stuff going into it could just leave you thinking twice...
Fear not, for tonight we will explore together one of the coolest and most tasty Thai dishes, learn more about one of the world's most meaty 'salads,' and find out why Laap definitely NEEDS to be on your next table of Thai food.

    I'm a Thai and watched you many years ago since you were in Mark Wein videos, very good to see your Channel much more famous because for me you are the Farang that I believed you already could be a Thai and your Thai accent are perfect I meant for me as a Bangkokian your Bangkok accent are much better than many Esan and Tai(south) Thai people for sure I can guarantee.👍👍👍😂😂😂

    Last time Joel picked a restaurant with an interesting slogan; this time he picked one with an interesting name. "Wittee" (วิถี) can mean the method of doing something, but that's usually expressed as "wittee tam" (วิถีทำ). "Wittee" can mean path, route, or way. There's a very common expression, "wittee Thai" (วิถีไทย). It meets the Thai way of life. Living life the Thai way means maintaining the culture, keeping the customs and traditions alive, following social norms, etc. And you pass all that on to your descendants. Larb is such a signature dish. It's associated with a certain way of life. It's the "taste of home" for so many people in the North, Esarn, and Laos. I wouldn't be surprised if the name of the restaurant is a humorous play on the term "wittee Thai". It appears to be a simple name, but there's a deeper cultural meaning behind it. "Wittee Larb"... "The Larb Way of Life". 👍👍👍 I love it!

    I was born in Cali so it was so easily accessible to get these ingredients. First born Gen asian cambodian/I don't know anymore. I joined the military then traveled so much. But fast forward I'm in lousiana. Not much but what any culture does make it work it. I'm in a state that it's alll agricultural. Love it, I'm actually making things that is only here. Sadly there's not alot of fish I want to eat here.

Neat little place back in there and the food was pretty good! I unfortunately forgot to order ga -lam pad nam pla which is a favorite of ours and I want to also try the Laab Kwai so I’m sure I’ll have to go back sometime.

    Oh wow! I visited Chiang Mai over New Years and I celebrated NYE just around the corner from that place at 1st press bar. I even bookmarked this restaurant but didn't manage to visit. Food looks amazing! Can't wait to come back to Thailand :)

Have I been dooped? Lol here we add ingredients such as peanut butter, fish oil, soy sauce, sriracha, light brown sugar for balance and either rice vinegar or tamarind paste.     Here in US (New England) in Thai restaurants they call it larb. Mostly made with chicken meat. It's usually pretty dry, at least what I had.

    That's how it's spelled in English, but it's pronounced as Joel explained in the video, "lahp". In Thai, the are no words ending with a "b" sound.

    @@JoelsTastyRide Joel you dont even know, here in my Minnesota Asian grocery store, I can buy beef bitter bile juice in a small refridgerated container, and when I want to make laab or bitter beef tripe soup, all I gotta do is throw in a small spoonful and mix it in....whalaaa! Its magic as weird as that sounds. You gotta be a REALLY good friend for me to share my secret stash with you lol.

    @14:40 I think that's what Thais call "ma-dtum sah-u" (มะตูมซาอุ "Saudi Bael"). It's not actually in the bael family, but Thais gave it that name because its fragrance is similar to bael. It's commonly eaten with larb. There are many English common names, Brazilian pepper tree or Florida holly, for example.

    I'm guessing you've been looking at videos of "khao gaeng" (Curried dishes with rice). Stir-fried dishes contain meat cut into small pieces as well. The pieces have to be cut small by necessity. If you put in a piece of meat too big, the vegetables will be overcooked by the time the meat is done. If you want bigger portions of meat, there are plenty of options. Grilled chicken and sticky rice is one of the most popular meals in Thailand. Grilled beef is also popular. Go to a Thai food market, and you can usually find whole grilled or steamed fish. Last year I went to a celebration at a mosque. They had one half of an ox on a spit rotating above the coals! The price listed was per kilo. Of course, you could get as little as you wanted but, obviously, not small pieces there. They'll chop it up however you want. Ditto fried/steamed/grilled chicken at the markets.

    ​@@JoelsTastyRide They've been advertising parasite medicine during the televised Muay Thai fights for decades. If the TV's on and I hear a commercial for the medicine, I know the fights are on! 😅 The reason is well-known. Most of the viewers are from Esarn, and with all the raw food, many of them have parasites. I know some people who take the medicine every once in a while just to make sure they've gotten rid of them. I used to do it myself, but it's been so long since I've had raw food or the uncooked fermented fish sauce, that it's unnecessary.

    Great! Thanks for sharing another new place (to me! [for most of us?]) In Chiang Mai! Never knew about this place, even with searching on Google maps. There are many spellings of (Laarb, Larb, Laab, Laap, Lab, ลาบ) Oh! WithiLarb shows up with the org Thai word ลาบ (Best way to search for OG food. Great explanations of what you're eating, how to order too! If I recall, you made a video with your pal, Bank's family who were preparing ลาบ maybe even roasting the ingredients for Pric Laarb! I guess at the end of this, the owner was showing you the house Pric Laarb they have for sale. It seems that most serious Laarb places have their own house blend that they often have bagged (bottled!) for sale. Fun to collect and compare. I kind of think of Lanna Pric Laarb the same way I think of Oaxacan Mole' ; all kinds of mystery ingredients slow roasted and ground. Like the Maquan you mentioned, in the same family as Szechuan peppercorn (Prickly Ash.) There's even ground tree bark in some recipes but yeah, all kinds of "secret ingredients!" My favorite in town (so far,) is Laab Kai Meuang Phan Waen. They've got the Bile as a side dish, that you can just dip your sticky rice scoop right into! YOW! I love a bunch of others south of town, including the "Laarb master" at the Sanpatong Buffalo market on Saturday A.M. !
