These 4 dishes are a perfect example of how adding or swapping just ONE ingredient can completely change a dish. With that in mind, while it’s ok to swap bacon or pancetta for the more traditional guanciale, just know that you are tasting a different dish. Still tasty, just different.

    It's actually refreshing seeing someone take their time to talk about their food in such a classy and elegant manner. Nowadays it seems like everyone is on a rush to through as many ingredients as they can into their pans or cooking boards and it's just so tiring and uninteresting. The editing skills for those videos must be awesome, but what's with the rush? Like calm down a bit and let us enjoy the cooking. And it's not that I'm old and can't keep up with the videos, I'm just 27. But I remember the cooking shows I grew up with in the tv in the early 2000s and you do miss the love some of those men and women had for what they were doing.

    It's funny because the fewer ingredients, the harder it is because it usually requires better technique, while having more does offset it a bit, and makes it possible to cover

    The longer I cook at home the more I appreciate simple pasta dishes like these. It's not always a toss up between a red sauce and a white sauce like when I was a kid.

    I can recommend dried mushrooms if you ever need to toss something together. I store them in jars. When you need them: 🍄 take a hand full and toss them in hot water for 10 min. 🍄 Take them out of the water and squeez the water out 🍄 Sear them with some butter, onions and garlic 🍄 When they are as brown as u like add the mushroom water and reduce the broth 🍄 Toss the spaghettis in and put some Parmesan over it

    Before and after visiting Rome, Cacio e Pepe was, is, and always will be my favorite Roman pasta dish ❤ so delicious. All of the other ones are incredible as well, but there's something about Cacio e Pepe. Comforting, warm, simple, and just so delicious.

    don't pronounce the 'i' in cacio… it's 'kacho', like in karma and chocolate (without the 'i', it would be pronounced 'kako', which in Italian is a persimmon)

    First time I ever had carbonara was actually in london (hear me out) at this small italian resturaunt, owned and run by an italian immigrant. He took our orders personally and he went back into the kitchen himself to cook. There was a window so people could kinda see into the kitchen, and Ive never been more stoked for a meal watching him make that dish for me. Best pasta I had ever eaten, hands down. I wish I could remember his name, or at least the name of the place

Be sure to try some real Roman style pizza too and enjoy the amazing pastries at local bakeries. Stay away from the tourist areas when you're looking to eat and you're guaranteed to find great food. Trip Advisor is great for finding places, look for reviews from locals or just ask the locals, they're usually super helpful and happy to share their favorite restaurants. I recently returned from my stay in Rome, it was absolutely amazing. Enjoy it!

    What's your opinion on "if something is different then you can't call it *food name" For example, when people don't use guancale, but instead just toss in some bacon and still call it "carbonara". But others are so isulted by this and they scream on the internet from every corner about how "THIS IS NOT CARBONARA IT'S JUST A "PASTA WITH BACON, EGG AND PEPPER!!" But when it comes to restaurants, they can serve you "carbonara" in such a unique way, that you wouldn't even consider it a carbonara, but as soon as you eat it - instant realization from the flavour and overall texture of the dish. So where is the line? P. S. My the most favourite is always a spicy one. So I support you on this one, friend! Keep up the great content!! ❤

    I think you can still call it that, just say it's "your Carbonara" or a "spicy carbonara"... it's more about how you present it. If you're claiming to make a classic recipe, you should respect the tradition and acknowledge it, but I support bacon, cream, spice, etc... that's how you get the NEXT dish. Innovation and adaptation is necessary, but don't present it as "This is carbonara" when it's "Carbonara with bacon"... just call it "Carbonara with bacon" It's complicated, and at the end of the day, number 1 is to make it taste good and make it with love.

    @@TriggTube Totally agree on this. My negative affirmation was probably towards some "highly sophisticated and elevated" food snobs, who can't stand any kind of additions or variations except for the classic recipe. In my country it's a common joke when people are getting mad because someone posts a video saying "today I'd like to show you how I make plov (pilaf with meat)". These guys are insanely judgmental and all they say is "oh, that's good, but don't call your rice with meat THE PLOV!" Even though the author's never implied he is authentic in any way... So thanks for the answer, it's good to hear reasonable arguments combined with respect towards gastronomy! Wish you and your channel all the best!!

    Amatriciana its actually from a place in umbria (another region close to lazio the region where roma its stated) The place its called amatrice.

    Oh yeah, now those look good. Oh man, it makes me miss my grandmother. She was such an amazing cook. And she could cook anything. She was a great cook and baker. I miss my grandma. I read that at 10 out of 10 now I don’t know how it taste but I remember my grandmothers, and it was a 10 out of 10 ❤❤❤❤❤❤

    Those are the four Rome pastas! I'm part Roman in ethnic heritage. Ate a TON of those four over the years. Ready for a guilty pleasure of mine though? Spaghetti alla Puttanesca. It's from Naples but damn is it ever good. The capers, kalamata olives and the umami of the 10 or so anchovy is just... Amazing!

    Carbonara to me is the epitome of a soul warming comforting dish. My mom would make it a lot as a kid, and its so simple and so good. I hadnt actually had Alla Gricia until recently when I went to stay with my Zia in Rome for a few days. Man that was so good and even with slight differences a completely different vibe of meal
