Well-Spiced Turkey Ara’yes With Yogurt Dipping Sauce | Recipe Drop | Food52

Check out Food52's new series Recipe Drop, where one of our Test Kitchen experts walks us through a brand-new recipe they developed just for Food52. Tune in for exclusive original recipes, from buttery pastries to showstopping roasts.
"Ara’yes are meat-stuffed pitas originating from Palestine, Lebanon, Syria, and Jordan. They’re traditionally prepared with lamb, beef, or a combination of the two, and seasoned heavily with warm spices. After a quick marinade in the fridge, you fill the pita with the mixture, smash it, then grill the bread on both sides to create a crispy exterior and a savory, juicy filling. This turkey variation is a lighter but equally satisfying version of the classic, with a well-spiced mix that stays true to the dish’s roots. A bright, fresh, and slightly smoky yogurt dipping sauce rounds it all out." -César Pérez

Egypt also has something like this. I made it once it’s really easy. Use this as a method more than a recipe. Basically put any meat mix inside a flatbread and cook it. Yum yum

Hey César 😉 I love to eat food enclosed in something like empanadas, Jamaican Beef Patties, Egg Rolls 😁. I really like Ground Turkey and Chicken. You can play with all types of seasonings and make it taste different every time. I’d say this recipe would be a diff spin on a Turkey burger yet in a diff vessel which makes it lighter. That dipping sauce sounds divine too. Take care ✌🏾.

Reading this title first thing in the morning with bleary eyes, I thought it said ‘well-spaced turkey ara’yes’. Silly.
