@@NirmalPillaiOriginal Sambar comes from part of the world which is called Tamilnadu in the modern day India. It can be argued that the dish was part of the Tamil cuisine for a long time. The etymology of the word Sambar comes from the Tamil word Chaampu which means, ground paste or fine paste. So any curry made from a paste of ground spices and concoctions is technically Sambar or Kulambu (literally ‘Emulsion’). There are evidences which point to inscriptions from the early 15thCentury CE; which speaks of Chambaram and Amuthu (Rice). In fact the South East Asian Sambal dishes carry the same etymology. However the story behind the dish as we know it today as Sambar, is that it was created in the kitchens of the Thanjavur Maratha King, Shahuji in the 17th Century. King Shahuji had a special guest of honour at his court, and had wanted to prepare a feast. Marathas famous for being vegetarian, had planned on serving the traditional Maratha dish Amti. However, the royal cooks had ran out of Moong bean lentils and Kokum; which were the traditional ingredients needed to cook Amti. So they experimented with Toor lentil (Pigeon pea split lentils) and Tamarind pulp instead of Kokum; and also added ground Coconut and vegetables. Guess who was the guest of honour? It was the Maratha King Sambhaji, the son of Shivaji. Hence the newly created dish was named Sambar in the honour of the guest of the court, and the Maratha King. Why were the Marathas ruling Thanjavur? Well, that’s another story in itself. Thanjavur (Tanjore) was ruled for a while by King Vijayaragava of the Vijayanagar Empire; who was killed by Chokkanatha Nayak of Madurai later, and conquered the kingdom. He installed is brother Alagiri as the ruler of Thanjavur. Alagiri later threw away his allegiance to Chokkanatha and the Madurai Nayak kingdom; and eventually declared Thanjavur an independent kingdom. One of the sons of King Vijayaragava induced the Sultan of Bijapur to help him get back the throne of Thanjavur. The Sultan sent his army to conquer Thanjavur, under the Maratha General Venkoji. He overthrew Alagiri, seized Thanjavur, and made himself the King. Thus the Marathas started ruling over Thanjavur. So as you can see Sambar was a Tamil dish which was somewhat re-imagined and packaged in the Maratha royal court in Thanjavur

Bro Sambhaji Maharaj didn't creave for Dal, he craved for "Amty" which is a Maharashtrain dish made out of Dal, kokum for tangy taste. He couldn't find Kokum in Thanjavur so he used tamarind which was available widely

@@gauravmhaske6932 Pretty much, but daal as North Indians know is much different from Aamti or Sambhar, in that Tomatoes are the acidic element as opposed to Aamsool (Kokam) or Chinch (Tamarind).

The version of Sambhar story I heard was that when the city of Tanjore in Tamilnadu was ruled by Marathas, there was a shortage of grams for Dal that Marathis eat. The king ordered his chefs to find an alternative and thus Sambar was born

The story I heard is that he wanted Amti which is a sweet and sour Maharashtrian dal made with tamarind and jaggery. The cook tried to recreate the dish but made use of local ingredients which created a slightly different but delicious dish.
