    Great looking beef ribs! Thanks a lot for taking the time and effort in showing how much charcoal was used and leftover. It highlights the efficiency of the WCS really well. I reckon my regular Weber kettles aren’t anywhere near as efficient. Keep up the great work.

    Thank you! I don't mind at all showing how much charcoal the grill used, this way it gives everyone an idea of how well they are for fuel usage. The regular Weber kettles are nowhere near as good as the WSC, the only way I can see a 22 kettle getting better performance would be adding a charcoal ring and defuser to it, then I can see it performing well for fuel consumption and also letting you have use of the whole cooking grate for a cook.

    Ah-HA! I knew you were from Canada! I'm in Toronto. Smoke on, brother. That rack looks fantastic. I prefer short ribs to brisket any day and you certainly did them justice.

    Thank you Mark, I’m from Toronto but now live in Innisfil. I love a good rack of beef ribs they are fairly easy and pretty forgiving to cook I find.

    Good cook. I used to do beef ribs, but was never able to get a hold of a nice, uncut rack. You could also take your temps higher, to 300 or so, they still do fine. Based on what I and *most* do, I'd have made a dent in your fresh charcoal, dumped the lit stuff in the middle to ensure you have good symmetrical heat coming up around the diffuser plate. Or you can just flat out dump your lit stuff on top of the unlit. The snake/method used here is mostly used on kettles where temps get super high unless you use some slow spreading snake type method.

    I’ve done the minion method with me charcoal in this grill a few times and the charcoal burns from the left around even though I put the lit coals in the middle. Check out this video I did where I used this method and at the end you’ll see what I’m talking about. The Summit Charcoal Grill does burn the charcoal the same as a kettle does. kzread.info/dash/bejne/jKiMy7ihm5m5irw.html

    Hello Paul nice video .. asking for some help here ... I'm trying to find the measurement of the table ... just the depth of only the table .... I see the dimensions says the the depth is 35 but I guess that is incudding the handle and the back support (wider part) ... so what would just the table be ?? ... thanks in advance !

    Paul, I just ordered this new model from Weber. I have been looking at their Summit for a few years. I am swapping from a Kamado Joe Classic to this smoker. I can't wait for it to come in. It appears you're the only person on KZread with this new model.

    Thank you Robert, I’m sure you’re going to love it when you get it in. You’ll have more grill space then the Kamado Joe Classic. I’ve never used a ceramic kamado but this grill does great for me. I don’t have the new S6 my grill is the original Summit Charcoal Grill Center. They’re the same grill with a few slight differences to the cart and the heat defuser that’s all.

    @@paulsq_ Actually ended up canceling the S6 as I was able to find a Gen 1 locally through my sister's work place. 25% off! I preferred the cart for its storage capabilities and the hinged deflector place. Smoked some ribs yesterday, along with some pork chops and sausage. 1st cook went perfect.

    That’s awesome to hear Robert that you did your first cook on it already. I’m glad you were able to get the Summit Charcoal Grill Center like mine over the S6 and that I helped you out. I’m sure you’re going to love it even more once you start cooking regularly on it.

    I usually cook for large groups of people. How many of the racks of beef ribs can I cook at a time. Btw, I just ordered my kamado today.
