We Made The Original Dr Pepper Recipe From 1885 !!!

Ingredients
1L (4 cups) water
175g dried prunes
130g raspberries
2 vanilla beans, split
15g dry wintergreen leaves
8g whole cloves
2g peppercorns
20g chopped ginger
2.5g ground nutmeg
2g (around 10 pods) cardamom
6g cinnamon stick
4 juniper berries
3g cut and sifted wild cherry bark
3g liquorice bark
3g sarsaparilla
2g cut and sifted gentian root
800g sugar
10g citric acid
15 mL molasses
30 mL pure almond extract
10 mL cherry extract
5 mL lemon extract
5 mL orange extract
2 mL star anise extract

    The bitter flavor is likely from astringents in the barks that are in the recipe. You could try adding the barks later. Another tip would be to wait until the mixture is cold before adding the extracts as the heat can denature the flavor compounds. Just what I've learned in my couple tries of making homemade root beer/dr pepper. :)

    You guys should’ve used seltzer water set of club soda probably would’ve been better because that’s what they used for Dr Pepper and Coca-Cola seltzer water

    Club soda has bicarbonate of soda in it to flatten the taste of the carbolic acid the CO2 imparts to the water. Use seltzer water. All seltzer is is carbonated water. The baking soda in club soda messes with the flavor of everything. Also, you might be getting some bitter from the orange oil. As an oil, it doesn't like to mix with water, so I probably would have used strained orange juice. Also, refrigerate the soda water so it holds the gas better and doesn't melt the ice the instant it hits it.

    My opinion first with this kind of recipe you really need to use exact amounts that means using a scale the kinda close method doesn't cut it. Two get a soda stream so you can mix soda with plain water and get the flavor you want and have the carbonation.

    Long before Soda Stream, I got a 5 lb tank of CO2 with a regulator and a pin type connector that fits most Cornelius kegs. Someone also came out with a thing called a "carbonator cap", which screws onto a standard PET soda bottle and lets you connect it to the pin lock connector on a tank of gas like the one I have. *You must have a regulator to keep the pressure reasonable! If you do not, it could kill you!* To properly carbonate water, you fill your bottle with water, leaving head space at the top for gas. Then REFRIGERATE IT. Get it as cold as you can without freezing it. Cold water can dissolve more CO2 in it than warm water because cold water is DENSER. It's the opposite of dissolving a solid into liquid -- then, you want to heat the liquid to dissolve the solid. But when dissolving gas into liquid, you want the liquid COLD. You can screw the carbonator cap directly onto the bottle after you fill it with water, then when it's cold, connect the cap to your tank of CO2. Crack the valve open. The bottle should THRUM solid like a drum when the gas pressurizes it. Then agitate the bottle to dissolve the gas into the water. This is just like stirring your coffee to dissolve sugar. You need to move the liquid around to disperse the substance you're dissolving into it. So shake the stuffin's out of that bottle! Then close your valve and quickly disconnect the carbonator cap from the hose. Put it back in the fridge and let it sit for at least half an hour, preferably a couple of hours, to let the gas finish dissolving into the water as much as it is able. Now, if you gently remove the cap, it shouldn't foam up. If you refrigerate your store-bought seltzer or club soda, it will not foam up and lose all your gas to the air like a room-temperature bottle will. Warm water holds CO2 badly. Warm carbonated water will go flat FAST. I've made my own soda for years. I started with sugar-based sodas until I went type II diabetic (not because of the soda, my mom was type II), then I switched to artificial sweeteners, mostly erythritol, allulose, or monk fruit extract. When I used sugar, I could naturally carbonate it with a bit of champagne yeast. Some yeasts will stop when you get them cold in the fridge, and others will slow down but keep working in the fridge. I found one that will work very fast when warm and slowly but steadily when cold. Great for making hard beverages, lousy for just getting them fizzy. It's great for making a homebrewed "white claw" like seltzer. It does require you start with a sugary base liquid, but will eat the sugar until as much has turned to alcohol as possible.

    Love these types of videos :) You three should make another channel together, testing old recipes like this and the Coke one. I personally love watching KZreadrs who attempt to recreate old recipes and try them. I find it interesting to see if its even doable, keep up the amazing work! Also love the MRE video's as well, learning about different foods for different Military. :)

    Sounds like it could've been tonic water and not soda. The bitterness being from quinine. Maybe they messed up the bottling.

    Try sparkling water, like pierre or off brand. Seltzer style water. No more bitterness

    Next time, invest a few bucks in a kitchen scale. Either that, or pre-convert your metric into imperial, so you can use teaspoons. But a kitchen scale would be better and probably would get lost in the cost of the other ingredients.

    What did you put in it for the caffeine? According to google the caffeine they put in Dr. Pepper and most commercially produced caffeinated soft drinks is synthetically produced in a Chinese pharmaceutical plants.Synthetic caffeine is produced by chemical synthesis of urea as a raw material, which is then combined with different chemicals such as methyl chloride and ethyl acetate. When caffeine is made synthetically, it is produced with a much higher concentration and is absorbed much faster by the body.

    If you don't mind, where did you all find this recipe? I've only ever heard of the "Pepsin Bitters" recipe (which might have been a very early precursor and contains gentian root, cloves, cinnamon, and a couple kinds of tree bark)

    The bitterness is probably quinine since the english used it to combat malaria in the tropics thru gin and tonic. 🍸The tonic part being quinie and as it it so bitter tge gin would mask the taste. As allways love your cooking videos❤

    Gentian is a probably your primary source of bitterness here - it is a key flavor in Angostura bitters, and Italian aperitifs such as Aperol and Campari

    Educational. It's funny if you think about it, how many tries it took to get that flavor profile. Either club soda or San Pelegrino might work. I liked the Coke video. Maybe root beer or ginger ale for next "soda pop" video.

    Just use plain water and make some CO2 gas to put in the water, probably under pressure I don't know for sure. You can make CO2 gas with citric acid and baking soda using equal parts of each(I think) and mix them together in water. Make the CO2 in a closed container an you will need some sort of tube to run from the container over to your drink and probably attach the tube to a lid that you can hold down against the rim of your glass to let the pressure force the gas through your drink.

    I appreciate the video and enjoyed the content, but I am surprised that after purchasing so many expensive ingredients that you couldn't invest in an inexpensive kitchen scale. It would have made a difference in your accuracy. Also, 3 teaspoons is 1 tablespoon. Much easier. AND club soda has sodium and other ingredients. You really need seltzer water to be honest to your ingredients.

    Should’ve of used seltzer water instead of club soda. , club soda has sodium content which will alter the taste on what your actually trying to achieve.

    This guy is so frustrating lol. Telling her its good enough for some measurements when it obviously isnt, and also saying its even when they first put the syrup into the cups when its obviously not lol.. then telling her not to add more syrup (soda syrup takes a lot to get the flavor right, especially older recipes.)

    I made the voke recipe and its delicious and on the fourth sip it tastes like coke but i like the first sips where you can taste cinnamon lime orange and vanilla
