Kam Heong (金香) recipe uses NO lard la. Also, look at shop sign 9:54 "NO PORK, NO LARD". Not just "salt/sugar", but also taucheo, soy bean paste (豆酱), among other ingredients, which gives the dish its dark colour. 🤦‍♀

Kam Heong style gives very strong aroma from stir frying curry leaves, dry shrimps, garlic and chili padi. This dish was created in Klang Valley, I think.

Some vendors used pork lard Instead of using cooking oil to get a glistening effect and taste Richer if I'm not mistaken.

@@aa.r2588 I think lard is used in pastry to make it more crust crispy and glossy (even in the west), not in stir fry dishes as lard costs more and extra work to turn it into liquid form. Since chinese cuisine in Malaysia is based on southern and Cantonese style, oily stir fry dishes will only be frown upon. Some of the best Chinese restaurants in Malaysia serve dishes with almost no oil in its plate due to skill. In many part of China dishes can be very oily due to its unusual economy development and popularity of Sichuan cuisine.

halal en ridzuan. saya bukan saja interview aunty pemilik restoran malah saya siap masuk ke dapur tapi tak semua scene masuk dlm video ni. walaupun saya bukan la muslim yg sempurna bergelang berantai sports bagai tapi saya tau batasan saya malah selama keluar dgn kawan2 saya ini pon tak pernah tinggal solat. saya harap en ridzuan dan siapa2 lagi yg rasa benda yg sama dan terbaca komen saya ni boleh lah berhenti menyangka buruk. terima kasih

itu la tu, agak questionable kan. Halal bukan "no pork,no lard" je lebih dari tu. Malas komen panjang panjang, doakan yg terbaik 😃
