We have the fourth cuisine worldwide in 2022.
So so excited to finally see you trying some more unusual romanian food. The organ sausage is named caltaboş, the krispy belly is jumări, the uncooked belly is slănină, the skin is şorici and the meat in the jelly is tobă. Today ivana has eaten in a more romanian style because she has eaten everything with bread and green onion. Steve bonus point for the palinca before the meal. FOARTE BINE! 👍
I declare Ivana the most romanian out of you two. She’s eating spring onion with pork, and the “I want to take the bread home” part, officially made her a romanian girl 😅
Oh boy I am a Brazilian living in Ireland and I will definately visit Romania ASAP! The food looks delicious and the people I already know some Romanians they are super nice, super outgoing exactly like us from Brazil! :D

You accomplished the full mission in Romania, by experimenting places, traditions and food. What a better method to understand a country as a tourist. You eat "ciorba" and drink palinca, for few generations. I am glad that my country showed hospitality and made you feel nice. Well done.

Hi again. I will make a short description of the traditional diet for Romanians. So, I've aleady described the pork use before Christmass. This comes after the 40 days fasten before Christmas (no meat, no cheese, milk, etc), where you have a lot of vegies from autumn. At the end of February, beginning of March starts the fasten before Easter. The pork is "cleaned" from body. But there are no vegies from autumn! Still, now appear fresh, green onion, green garlic, salad, radishes and oters. All with iron. Your blood will be OK. After Easter, where we eat lamb (as lambs appear in spring), the diet will still contain some smoked pork meat and chicken, but very easy cooked meals, as peasant were going the whole day on the fields and had no time to cook. Also a lot of chees or pork fat with vegies, and bread as snacks on the field. In autumn all strats all over again.

Hi Ivana and Steve, we love you for what you are doing for our country, both of you are very nice people,polite ,kind, specific to Canadian people. I am Romanian, living in Canada for many years, we love living in Canada, but it is very nice seeing Canadian people loving Romania. About the plateau, you had there some” headcheese “that in Romanian is named “toba”God bless you with a good trip in Romania.

The appetizer is called "peasant appetizer" so...yeah..that was a winter appetizer in the countryside in the times people had land( the more you had the richer you were) ..they all had at least a pig that would be sacrificed at Christmas time and made all sorts of dishes that would last a long freezing winter. They had special cold rooms for preserving the food..all harvested on their land...dried fruit and vegetables...or in jars..jams...dried fish...salted fish eggs my grandparents used to cook them like the meatballs...they had the lake behind the house fruit trees in the garden...lots of tasty vegetables...land area were they had grapes for the wine...corn and wheet...sugar cane...sun flower..basically they were producing everything ang fed their animals all good healthy food. Nowadays...when everything is mechanized...their sons and daughters sold their parents land for a few bucks and went abroad to help the west harvest their grains for...a few bucks! How stupid is that??? I will never understand! Countries have wars over land and Romanians sold thousands of thier land extremely cheap! It makes me cry! Land is the most valuable thing on Earth!

"Gustare taraneasca" = Country-side snack / brunch. What you call "pork jerky" is actually Jumari. The wrapped cubes of organs is "toba" and yes, you are not supposed to eat the wrapping 1st layer. :)) I love the way Ivona is eating that spring onion. That's the way to do it!
Also guys, I saw you were going to stay for more time in Romania and I can't help but keep recommending visiting the south-west of the country near the Serbian border (Turnu Severin (with Trajan's bridge), Baile Herculane, Decebalus statue and Danube Boilers). It's like a hidden gem in Romania not many know about.

Ivana could learn romanian easily. Her pronunciation is great :)btw the pork skin is always different . As a romanian I m not a fan of all pork skin either:)) hope you have a great time,guys!

as Romanians, we add mustard on anything, i guess. But this one goes better with some fresh tomatoes, bell pepper or some onions. And obviously with bread
Fried pork belly= jumari; pork belly= slanina; organs in gelatin= toba; pork skin= sorici , etc.
The first dish - Romanian "gustare taraneasca" can be translated "countryside appetizer".
OMG you are making me so hungry. I can'n believe you are making a great Vloog just by eating lunch in Romania. You are inspiring . You can brand your trip and food in Romania. None of natives are having such a great vloog like you. If there is any Romanian travel agency needing a good advertising , they should hire you both. You are great. Hi guys. Just a short explanation on what the food on the platter was. The long thin strips were pork skin that we usually eat fresh when we sacrifice pigs for Christmas, they usually burn the hair on the pig for like an hour or more depending on how old the pig was(younger, softer skin, older, harder, thicker skin), definitely eaten after you rub some salt on it.

The fried pork belly we call “ jumări” and its usually just the belly and back of the pig and it’s dumped in a big 50-100kg pot, on the wood fire and fried without anything but some salt. They fry that until it’s fully cooked. There’s usually loads of actual solid fat left when you remove the “jumări” From the pot, and what’s left is lard or “untură” that we use throughout the year to cook and fry other stuff in.

The salami is probably homemade by them but we don’t normally make it at home everywhere in Romania, just some parts. We do make something like salami that we call “mațe”. We use the organs from the pork like liver, heart, perhaps even tongue, heart in some parts probably(not 100%) and meat of course.

The “tobă” or literal English translation would be “drums”, is probably because they use the stomach to wrap it and usually the stomach could also be used, in older times for drums as well(again not 100%, someone correct me if I’m wrong). The inside of that “tobă” is basically like a broth, in which they add meat, liver and other organs, plus some bones that are taken out before the broth is put in the casing to set( bones release the gelatin that sets it). I’ve honestly never really liked it but my parents do make some for Christmas period.

Also that spring onion we absolutely love to eat with cheese, tomatoes, fried eggs also with “jumări”. It’s most definitely a very Romanian thing to eat 😅

Also the thinner strips of pork belly are one of the best things you usually get in every single Romanian household over the Christmas period. You could have it done with garlic and paprika, paprika only or salted and smoked( most common and preferred). We also prepare the back muscles from pork the same way, as in salt them(keep them in salt for a few weeks, from raw, then smoke for a few days or weeks). Keep in mind we generally do this in almost all homes and everyone prepares it to their own liking.
With the green onion you start wit the white part; green part is only optional

Very good - excellent. There's another restaurant in Poiana Brasov that has real historical credibility - Sura Daciilor. As far as I understand, parts of that restaurant were used in historical movies filmed in the 1970s. It's always interesting to look behind the scenes, and it's great that this restaurant is adhering to traditional foods.

The meat that is pieces in jelly is called "head cheese" . Traditionally made from the left over bits after the head has been boiled, the meat is picked off and put into a terrine dish, herbs added and then the dish filled with the jelly/aspic/gelatin. It is then cooled til it sets in the fridge.
18:40 we called it ČVARCI, here in Serbia. It is a specialty popular in Southesastern Europe, a variant of pork rinds. They are a kind of pork cracklings, with fat thermally extracted from the lard. Preparation of čvarci involves melting the lard. Lard is cut in blocks of about one inch (2.54 cm) in size and slowly fried in their own fat. Milk may be added at this point in order to obtain caramel colour. Process lasts until all fat melts away and only a kind of tough crispy pork rind remains. Onion or garlic may be added as a spice and salt is always used as a condiment. Pieces of skin may or may not be attached. In most common varieties of čvarci, some percentage of pork fat remains. Ps I loveeeee it.

I just saw your video about the mask museum from the Neamt region. You should definitely check out this New Year tradition during the New Year period. Just visit Moldova, there are parades, and mask bands playing in the villages, it is really something unique that you can watch and film.

wow! Poiana Brasov is my favorite resort ski! I llove this place!
aaaa the "pork belly jerky" thingy.. we call them "jumari" and they're similar to the hispanic "chicharron", if you ever had that... at least to my knowledge... anyways this is basically unprocessed bacon (if it were boiled and smoked, it'd be bacon) cut into cubes and slowly cooked into its own juices, as in fat, until they're fried evenly. Now some people leave them in the lard ("jumari la garnita") or they take them out whilst still hot and serve them like that with mamaliga, or incorporate them in "bulz" , or put them on a platter with other pork products, we call that "pomana porcului" and they get served with cheese, onions, garlic cloves, mustard and definitely fresh bread and a "stampal" of palinca.The pork skin is called "sorici" , not to be confused with "soareci" which are mice... the sausage type stuff, as in the "toba" and "caltabos" are not usually eaten with the membrane on. Oh and the cheese, if salty, it's called "telemea", and it can be made from cow, sheep or goat milk, if unsalted, it's most likely "cas" and they're very popular with this type of platter. You guys are lucky you found that traditional place, it looks very homey and welcoming (and this is coming from someone who hates eating at restaurants), and you got to experience a piece of growing up in the Romanian countryside, and part of a traditional wedding menu (that would be the entrée).
