We Found the Best Gluten Free Croissant in Paris

How does Paris handle the most difficult pastry out there: gluten free pastry. We set out to the three dedicated gluten free bakeries that have bravely ventured into this challenge, spoke with some of the bakers, saw different parts of the city, and of course, ate a bunch of pain au chocolats.
We visited La Manufacture du Sans Gluten, Noglu, and Copains and enjoyed every second of it.
To prepare, we scoured google maps, yelp, menus, and reviews to see whether a bakery had gluten free pain au chocolats. Boulangerie Chambelland had some past reviews of pain au chocolats, but upon arriving to their bakery we were assured they had no such thing. They have other great goods though, so be sure to check them out.

    Thank you for a great video. I wonder if the crunch effect is a function of the freshness out of the oven. I found that there is no "real" croissant in Paris sans gluten :(

    Thank you! That's an interesting idea, that could be possible. We tried Copain's pain au chocolat less than 20 minutes later than manufacture, so those should be pretty similar timeframe. Noglu was about an hour later than that.

    not sure, but we doubt it, croissant lamination is usually achieved with layers of dough and butter
