"I work at a drive-through convenience store. I was so confused when I would grab a water bottle off the shelf, making sure it wasn’t one of the frozen ones, but when I’d go to scan it, it would be frozen! And then I watched it with my own eyes! I guess this is what happens when the temps are hovering around 0 degrees. I learned it’s a process called Nucleation."

    You can do this experiment in Florida as well. Just put some bottles in the freezer and take them out just before they freeze.

    Explanation: This happens because of the process of supercooling water. Supercooling allows water to stay a liquid below freezing temperature. Once the person in the video gave the bottle a tap, a nucleation site was formed, allowing the water to freeze.

    ​@@cepter6763 it is just that to be able to freeze the water it needs to start somewhere but sometimes there's any point in the bottle of water that could be a nucleation point, this could be for many reasons (like the water doesn't have any impurities), and that's why even thought the temperature is below it's freezing point it won't freeze until a perturbation trigger the icing process. Sorry if there's some spelling mistakes, English is not my first language.

    As someone who lived in Glendale for 3 years, I laugh at people who say it's just a dry heat. 120 is 120. Once I had to go to my mailbox & it was 100+ outside. I put on a jersey that was right out of the washer that was completely wet to beat the heat. 10 minutes to the box & back. Jersey was completely dry when I got back to my apartment

    take a small smart water bottle and a big one. cut the top of the big one just big enough so the smaller one fits really snug, cut the bottom out of the smaller one, put a bowl in the cap of the smaller one, boom awasome GB, that was my go to when used to smoke

    For anyone wondering, the water was supercooled in the bottle, meaning it was brought below the normal freezing temperature while remaining as a liquid. To actual solidify, the water needs what’s called a nucleation site; something solid to form the ice crystals on. When it’s picked up, air bubbles can form or minerals contained within the water can move and become a nucleation site for the water to freeze from. (It’s possible for water to freeze without a nucleation site, but it has to be very cold, around -39°C)

    It is called supercooled water. It is water in a liquid state below freezing temperature. Once it is distributed or agitated it will start to solidify.

    thats actually a pretty cool phenomenon when purified water reaches the perfect point where its literally almost freezing up even a bit of pressure or shock per say can instantly freeze all up, this happens because this water is actually already below 0 but it was cooled down in such a undisturbed way that the liquid didn't reorganized its structure until it was shocked by the movement.

    Purified/distilled water can be chilled below it's freezing point and remain in it's liquid form. It's waiting for a catalyst or a shock to grab onto, and then that point it solidifies, giving the water molecules next to it to grab onto, then that solidifies, and the chain reaction cascades until all the molecules solidify. If you don't shock the bottle and open the cap gently, you can drink the water in it's super-chilled state. If you pour it in a glass, it will solidify at the bottom and freeze the water up the steam where you're putting it, or it can drink it and feel your throat tighten up. Drinking water in it's super chilled state before it solidifies is colder than drinking ice water.

If you "shock" it, you're actually changing the pressure acting on the water... thereby lowering the pressure and the temperature enough to freeze it instantly. Mineral water has minerals, which can lower the freezing point of water, yes, but this trick is actually done with distilled or 'purified' water.

The outside temperature surely does play a role, by cooling down the drink further than the fridge is supposed to. This happens inside the fridge, where the cold air cools down the drinks trough the glass.

    When purified water is supercooled, it is cold enough to freeze but doesn't have any impurities for ice to "stick" to. Once you shake the bottle or touch it, it will instantaneously freeze :)

    Close, not exactly, basically water needs to be a certain temp to be forced to freeze, if it’s below freezing but undisturbed, the crystals don’t quite line up so it doesn’t freeze, once you disturb it they can line up, so it freezes. It can be soda or juice or anything, so not water purity

    @@Winter61742 The ice crystals need a nucleation site to form. When you shake the bottle, you create those nucleation sites, which cause it to freeze very quickly as shown in the video. If the liquid is not "pure" (aka it has small particulate matter in it), then there are sufficient nucleation sites for it to freeze without being disturbed.

    For those who are curious, that’s called supercooling or undercooling. It’s just lowing a liquid’s temperature below it’s freezing point. When liquids freeze it’s starts from a catalyst of sorts like seen in the video, so if the water is left undisturbed it will freeze below freezing point but the smallest disturbance will turn it to ice

    @@Puchifol Catalyst isn't quite the right word, but you and the OP are correct otherwise. To form into a solid, liquid water has to begin crystalizing. To begin crystalizing, the water either needs enough kinetic energy to move around into the crystal formation, or it needs some kind of surface (like a mineral in the water) to use as a starting point for crystalizing. In this case, the movement of the bottle is most likely what starts the crystalizing process. Because the coolers don't have very much vibration, there wasn't enough movement inside the cooler for the water to have the kinetic energy to move into the crystal formation.

    its actually likely colder in the freezer, it just stays liquid unless it moves or if the bottle isn't perfectly clean. you can do it in your own freezer too if you set the temperature correct.

    Well it happens due to the rapid change in temperature. The bottle is in the cold then faced extreme heat. It happened a lot when I was deployed in Afghanistan and Iraq.

    Just for those who dont know. If you have pretty pure water that is really really still, it wont freeze exactly at 32. In fact it can get pretty low, its because theres nothing for the ice to start forming on. So when you pickup the water, it jostles it just enough such that the shock causes the ice to start forming. Once it starts all of the rest follows, which is why it moves like a wave.

    @@angelobelmonte6438 because I’ve done it before. I have a hot tub at my place and when it snows I go in the hot tub and then I roll the snow and get back in the hot tub. It’s so refreshing.

    If anyone is wondering how this happens: the bottled water has been distilled so almost all of the impurities have been removed. Then the water gets cooled below 0 degrees C like in the freezer. However, the crystal structure of the ice doesn’t have a nucleation point (place to start from) since there aren’t any impurities in the water. So when she shakes the bottle it starts the process.

    As a science nerd, this is a fun trick. Super cooled, just needed the shock to start the crystallization process. Bottled water is so clean, nothing for ice crystals to form on until vibrations cause the solidification.
