Indeed it would be unfair to replace him on the left wing if Mbappe does come through to Madrid, however the coach knows what's best for the club and that is why he is the coach.

Even if Mbappe wants the no.10 he will not get it. The club policy with shirt numbers is 1. Incoming players can only pick a number that’s available. 2nd policy is current players can trade amongst other players their preferred shirt number. 3rd the club doesn’t interfere with assigning shirt numbers. Modric currently wears the no.10 shirt at Madrid. Mbappe will have to wait until Modric retires before the no.10 becomes vacant. When will Modric retires? Nobody knows. I’m sure Ancelotti will experiment thought, probably play some games with mbappe as striker, some games with him on the left, some games with him on the right. Plus I can imagine Ancelotti giving mbappe and vini the freedom to play however they like.
