To cook this recipe with pork, you will need the following

Recipe:
Pork - 900 gr.
Onion - 2 pcs.
Carrot - 2 pcs.
Tomatoes - 4 pcs.
Tomato paste - 3-4 tablespoons
Salt - 1 teaspoon
Black pepper - 1 tsp
Thyme - 1 tsp
Coriander - 1 teaspoon
Basil - 1 teaspoon
Water - 600 ml.
Bay leaves
Cream for cooking - 100 ml.
Corn starch - 2 teaspoons
Paprika - 1 tablespoon
Parsley

This is an old recipe I have made in the past and it is very good. The only thing I would recommend and I do this every time I sue tomato paste. I would put the tomato paste in the pan about half way through the 6 mins of cooking the carrots. If you fry tomato paste in the onion juices and oil it gives even more depth of flavor to whatever it is you are making.

I never thought of using any milk product with the corn starch, what a great idea. I usually use wine, but this is a fantastic idea for that creamed texture!

Bacon grease instead of seed oils. Seed oils are horrible for you. Flour the pork first for a better fond. Only sear off half the pork. You'll get the same flavor in the sauce, but the unseared pork will be more tender. Otherwise, this reminds me a lot of a variation on my favorite gulyas recipe! Just with fewer onions and added sweet pepper/carrot. Good job!

I did this with leftover turkey...added lots of butter for fat. Super over rice.
It's almost like afritada/mechado from the Philippines
It's also better to soak the meat in brine which is just salt, baking soda, and water before you cook , I usually do that for at least an hour, then wash the excess salt off before frying it, it's far more tasty and the process causes the meat to actually tenderize before you make a stew from it.

Or for me instead of a brine giving it an hour or 2 in my smoker at the lowest temp possible. That'd would add an even better depth of flavor.

@@cbebop5 depends on the volume of water, but typically I use no more than a cup of salt, it's important to wash the salt off after wards before putting the baking soda on and letting it sit for 30 minutes covered loosely by plastic wrap. It tenderizes everything.

evaporated milk is likely to have texture/thickness issues. Unsweetened greek yogurt might work well, yeah. Maybe mix the two, actually, and you might get just about the texture you want with still some good flavor.

@@ratlips4363 coconut milk and cream are quite a bit sweeter than heavy cream, even the unsweetened kind you get in cans for like, thai curry. But if you're cool with that, it should be fine? At that point you're basically making a thai curry with a different base than the usual curry paste, which should work out fine. Won't taste the same but will probably taste good.
Yes ma’am. I do the same with 1 exception. I add potatoes in the stew. Over rice or egg noodles. If with noodles I add sour cream as well.😉

Rather than messing around grating tomatoes, open a large can of chopped tomatoes. Better taste as canned when at optimal ripeness.

We have a greater at home but it is only ever been used for potatoes and cheese. I honestly didn't think you could use it for anything else.

Could I do something like this in a instapot or crockpot? I'm pretty cooking illiterate...
I am always confused by "high heat" What does that mean? Whenever I turn the heat on "High" settin on the range I always end up burning the food (following the time instructions) regardless of which range I am using. And on the video it looks like a non-stick pan, which one shouldn't use it on hight heat anyway. Help me out here.

So the reason you added corn starch was to thicken the sauce... But you only needed that because you covered the pan while it simmered, trapping the moisture and not allowing it to evaporate. If you just uncover the pan maybe 15 minutes before the sauce is done cooking, you wouldn't need any corn starch with the cream, since the sauce would thicken up by itself. Just a tip to simplify the dish :)

He added 600 mills of water, no amount of boiling without a lid is going to thicken that sauce. At least not without any kind of starch from potatos or pasta.

@@matthewvorndran6931 I've cooked this dish at this quantity for years. 15 minutes simmering on medium-low heat is plenty of time to thicken a sauce like this. Water evaporates, solids break down.
