Thing is with vegito even though hes the stringer fusion and cooler. He just never got to finish a fight, with that we've never seen the moments after a fight. Instead hes this overpowered tool used to deescalate a situation

I don't think he's stronger anymore tbh, if it was even ever confirmed to begin with. He's more convenient, cause you don't need to match your power level, be similar size, etc. It's just a straight up fusion of 2 people regardless of their dissimilarity. And it never fails, whereas you can fail the Dance and end up with a messed-up fusion for 30 minutes Aside from that, both seem to do the same OP work, thought Gogeta gets the fight over with quicker, and has less immortal-BS to deal with.
