VEGGIE FRIED RICE WITH CRISPY STICKY TOFU

Another simple 30 minute recipe you can add to your weekly meal plan!!! I love one pot meals, makes cooking so much more manageable . And if you chop your veggies it makes it SUPER easy!
RECIPE
1 tbsp sesame oil
2 cups cooked brown, sticky glutinous or white rice
2 cups carrots finely chopped
150g shitake mushrooms
1 cup white cabbage finely shredded
1/2 cup green peas
1/2 cup fine green beans finely chopped
1/2 tbsp ginger finely chopped or grated
2 red chillies sliced
1/4 tsp asafetida
1 tsp Chinese 5 spice
1/4 tsp salt
sauce
2 tbsp sesame oil
2 tbsp soya sauce
1 tbsp sambal oelek
1 tbsp rice vinegar
2 tbsp agave
Tofu
1 block extra firm tofu
1 tbsp soya sauce
1 tbsp corn flour
garnish
4-5 sheets of nori
1 tbsp sesame seeds
THE MAGIC
1. Begin by preparing the tofu by cutting it into 1 inch slices, wrap in paper towel and place something heavy ontop to squeeze out the water - do this for 5 minutes then unwrap the tofu and chop onto cubes.
2. Put the tofu into a big bowl and sprinkle over the corn flour and toss the cubes till coated.
3. In a large frying pan add 1/2 tbsp of oil and heat then add in the tofu blocks and cook on medium heat, keep an eye on it while you prepare the rice and keep rotating and tossing the cubes till each side is brown and crisp, once crispy pour in the soya sauce and stir.
4. Add oil to a wok or a pan and let it heat. Once hot add in your ginger, chilies and cabbage, sauce fora couple minutes then add in your carrots, fine green beans, peas asafetida and 1/4 tsp salt. Saute for 5 minutes then add in the mushrooms and cook for another 10 minutes till the veggies are cooked but still firm.
5. Add in the cooked rice and mix
6. For the sauce add all ingredients except the corn flour into a small jar or bowl. Put the corn flour and a tbsp of water in a separate small bowl and mix together ( I forgot to do this in the video but its much better this way) add into the sauce and shake, then add into the rice mix and mix
6. finally add in the crispy tofu, stir and heat on high heat for 2 minutes till it sizzles and some parts of the rice become a bit crispy
7. sprinkle nori and sesame seeds on top
8. Say a prayer of gratitude and eat hot with extreme joy

    I make a version of this in my own repertoire, but I am SO into the sticky rice tip and this dressing with sambal! If you're taking requests, more SPICY food dishes, I LOVE good spice and heat. Also, ayurvedic dishes ideal for cooling the inner body over the hot summer are always welcome too. Thank you for your energy, it's beautiful.

    Love your videos but would love it more if you could actually test your recipes before just winging it and sharing it with your audience. So many home chefs and cooks test recipes to make sure it’s just right. I can’t imagine you nailed the recipe on your first go so please put some more effort in by testing your recipes first/experimenting and then sharing
