Veggie Fajitas

Bored of bland meals that all look the same? Now you've found the perfect option to spice things up!
Serves 6
Prep time: 10 mins Cook time: 20 mins
Ingredients
• 3 red onions, sliced
• 2 red peppers, deseeded and sliced
• 1 yellow pepper, deseeded and sliced
• 60g fajita seasoning
• 2 x 400g tin black beans
• 2 tbsp sour cream / dairy free sour cream
• 120g light mature cheddar / vegan cheese, grated
• 6 tortillas, warmed
Avocado salsa
• 2 ripe avocados, diced
• 4 tomatoes, diced
• 1 red onion, finely diced
• Handful of coriander, chopped
• 1 lime, juiced
• Salt and pepper
Options to serve:
• As a fajita salad bowl including - salad, Mexican rice, sweetcorn, red onion, avocado salsa,
coriander, cheese / vegan cheese, sour cream / dairy free sour cream.
• Meal prep with 1⁄2 bag of Mexican rice and green veg
Method:
1. Cook the onion and pepper over a high heat until softened and starting to char at the edges.
2. Turn down the heat and add the seasoning, stir well.
3. Add the beans with a splash of water and keep cooking until the beans are piping hot.
4. Whilst cooking, make the avocado salsa by placing all ingredients in a bowl and mashing
together, season to taste.
5. Serve the veggie fajitas in warm tortillas with the salsa, cheese and sour cream.
6. Making a big batch of veggie fajitas makes tomorrows lunch easy! Create a fajita salad bowl and some food prep boxes in minutes.
7. Box up some of the veggie fajitas with lots of green veg and Mexican rice and place into the fridge for 2-3 days for an easy food prep.
8. Alternatively, you can make a colourful and delicious fajita bowl by placing all of the salad ingredients into a large bowl and top with leftover veggie fajita mix. Easy and yummy.
