Vegan Peach Blueberry Cobbler - No added sugar!? 😯

Too often we think of vegan desserts as some kind of culinary hack, where we are "replacing" ingredients with science experiments. Not here! This peach cobbler is made with simple whole food vegan ingredients, no super-rich concoctions, just whole fruit, dates, and oats! Try to make this without eating the whole thing in one sitting, it's harder than it sounds! But what isn't hard is actually making it!

    I just made this recipe it turned out delicious. I really love this recipe because I refuse to use sugar and all the recipes I saw used a CRAZY amount of sugar. I ran out of vanilla extract so I used almond extract, and I used almond milk instead of soy. Next time I’ll opt for spelt flour and/or rice flour instead of oat. But honestly it was very delicious.😊

    I’ve made this a couple times now. The second time I added extra Monk fruit sweetener to the fruit mix, and I added slivered almonds to the crust and also a little extra pumpkin pie spice, basically cinnamon nutmeg and cloves, and it was total heaven! I am preparing two more right now with only peaches, since I have so many peaches right now.

    I made this yesterday with peaches and dewberries that I had picked and frozen. The cobbler came out very dry. So today I made it again this time I added about a cup or more of dewberries to the fruit sauce with the water and the rest of the ingredients. I baked it in a cast iron skillet because it was a little bit too much for the pie plate. It was very good!!! Thank you for the recipe.

    I really appreciate your video. I actually just got a smoker and plan to make a cobbler in a Dutch oven. I am new to baking, and was trying to make a less calorie version of a cobbler. I bought coconut flour earlier today before I found your video. Can I get away with coconut flour or is the oat flour better? Thank you!!

    I made it with apples and blackberries cuz I had no peaches but it takes a lot longer to cook that. Also substituted an avocado for the banana and it worked. Also substituted date juice and Young Living ningxia red for the liquid. I would add a thickener next time to the juice because mine came out too wet. Probably because of the apples not being cooked all the way but they still were good

    Looks like I’m going to make this. If that’s a burn on your hand I’m sorry you were hurt, put some lavender essential oil on it and that should help. Never leave home without it. I burned my thumb down to the bone on the inside of a pizza oven years ago and immediately put on lav. EO. Stopped the pain and no scarring. I’m an herbalist and aromatherapist. Stay safe.

    I made it and it looks exactly like yours. I think the baking time personally I would change to 35 minutes as the top inside was a little underdone. But not bad cleaning out my fruit out of the fridge and making this.

    Ps, what are your thoughts on nuts and seeds? My cholesterol level suddenly jumped up about 18 points on my last test (LDL went up 17); before that test, I had bumped up my nut and seed intake a bit, not sure if that was the cause of the rise or if it was from an extra restaurant visit or 2 (my wife likes to eat out more than I do), or from recent stress for the 2 weeks immediately prior to the test due my back going into spasms...anyway, thoughts on nuts and seeds and how they might affect LDL....thanks !

    Looks fantastic and I know it tasted fantastic as well! I'm all tied up in knots - I had a "Birthday Lunch" with my sisters (younger sister's birthday) and both are fat, one is a smoker. My younger sisters believe death is predetermined so all the healthy eating and exercise is pointless. They believe diabetes is from too much fruit and sugar. Debbie believes all heart disease is genetic. I knew they were not "in the know," but had no idea they were that STUPID. I need vegan friends..........

    Oh man, I was so excited until you started putting all those dates in it. I'm diabetic, and transitioned to vegan in February. I am now transitioning to more whole foods, but no way can I eat dates at this point. Not nearly enough fiber to counteract all that sugar in them. Oh well, I'll keep looking for something that doesn't have them in there...

    Dates actually control your blood sugar. Helped my mom with her diabetes using this hack that I learned from a guy in the grocery store who dropped 200lbs so he had my attention 😂
