½ cup soy milk unsweetened
¾ cup sunflower oil (+ 2 tablespoon if you want an extra thick mayo)
¼ cup olive oil
2 tablespoons lemon juice
1 tablespoon mustard
¾ teaspoon salt

    It’s ideal to use soy beans because Soy contains lecithin in it which can also be found in egg yoke. This substance allows fats to emulsify with water despite being hydrophobic. Understand that if you don’t use soy you will very likely not get mayo (rather you will get oily nut or oat milk that simply will separate within the day if not hour.

    soy milk contains lecithin too. soy milk also contains lecithin, otherwise we would not cook mayonnaise

    Thank you for the insight! I made it using chicpea juice - the starchs from the chicpeas cooking also make a good emulsifier. Mustard is also key, its a good emulsifier too.

    BEST Mayo EVER!!! You need about 1/2 c soymilk and 1.5 c oil though. I also added mustard powder, pickle flavored salt, & lemon juice. Some of the oil was my homemade garlic-infused oil. It made almost 3 cups!!! 😮. I also used a regular blender on low speed instead of an immersion blender. 😊

    It works with sweetened soya milk as well. I just used that, because that was in my fridge and it's the best tasting mayo ever. Thank you!!

    It's easy to emulsify if ingredients are room temperature or even warmer and if you add a little mustard. The ideal ratio should be 1 milk 2 oil

    Unfortunately this recipe is designed with oil…it can’t be substituted. But there are other mayos that are made with chickpea water, although they are not so thick and creamy ❤️

    My vegan dishes are typically larger than on my previous diet. So I would need more mayonnaise per dish. Preparing a smaller dish for mayonnaise and a normal dish with something else is too much work. A reduced fat or more precisely kcal version would be interesting. I recently used psyllium husk successfully to make a tahini mayonnaise freezable. After defrosting and stirring (but no mixer needed) it was as good as before. Perhaps psyllium husk (or something similar and equally healthy) can be used to reduce the fat content.

    I have a question. Why my homemade mayo loose thickness after some time? Should I add more oil ( I’m using grapeseed oil ) in the beginning?🤔

    Tried almond milk and didn't work. Added lots of canola oil and blended using immersion blender until motor is heated and still didn't achieve creamy consistency.😢

    Only soy milk is suitable for mayonnaise, because only soy beans contains lecithin.

    You can keep this much langer than 4 days. It stays in my fridge for almost a month sometimes. Put some kala namak in it!

    I would never make this because of all that refined oil & emulsifiers in soy milk (there's way little soy in it & more chemicals). I would rather use pasture raised eggs or cashews & Avocado oil

    I agree with coconuts being unsustainable. But soy (for human consumption in the EU produced in the EU - almost all soy I eat is produced in the EU) is great sustainably. It grows easily and it adds nitrogen to the soil which reduces the need of fertilizers (high CO2eq emissions through fertilizers) for the following plant grown on the field. I think you're confusing it with the soy produced for animal products.

    Here in Germany most of the soy for human consumption is in tofu products from Germany or Austria and milk is EU Soy.
