My husband saw another veg kolhapuri recipe very elaborate.. i.said do hebbars recipe.. he ws so sceptical.. ki its so simple.. how come.. i said TRUST HEBBAR.. and lo and behold it came out grttt
also, adding a little cashew paste and topping off with garam masala will make it even awesom. love the simplicity of your recipie

all ur recipes are great but I would like to add an information for this one,since I often make veg kolhapuri which I learnt from a restaurant chef. most recipes that gets its name from its land signifies its authenticity and the masala used.ex.veg Hyderabad,veg kolhapuri etc.kanda lasoon masala is wht should go as secret and real masala ingredient which makes it distinctive. the rest of garam masala is added.kasoori methi and deep fried veggies is wht needs to go as well.

I've seen a similar recipe in another channel. They have used malvani masala which I didn't find anywhere in Mangalore. Is it the same masala which you prepared in your recipe?

Oh no Hebbars kitchen dissappointed me for the first time. I was searching for "NON restaurant style" Kolhapuri. Even though I used to have it at dhabas which is technically a restaurant It was authentic style I remember the gravy was runny not so thick and basically just kolhapuri masala water . Something like you make but more red and more spice. I have searched the internet and nobody is makig it that way. They make it thick and grainy. Thought yours come closes to the authentic version I think in the authentic version there is no tomato. I think that authentic version is dead cause I don't find it in restaurants. The last time I had the authentic version was in "Little italy" YES they had also started an Indian menu and it had veg kholapuri. They made it the same restaurant style the first time I told them how the original was. The chef was a marathi he said he can make it but it will be very spice. He made the red color gravy and it was tasty but not as spicy but it had the exact same consistency. Then one day I saw my hands were red. I asked do you put color. He said yes and that if he didn't put color I would not be able to eat it if the only chilli was used to bring the color. I was pissed but he was a great chef I requested please try me. He did. Fiery Kholapuri the last place I had authentic style ironically in an Italian restaurant. I think that recipe is lost forever. I hope to find it and keep it alive atleast for me ;-)
