Vareniki - Ukrainian Potato Dumplings

Vareniki or varenyky are traditional Russian and Ukrainian dumplings. There are many different types of vareniki; potato vareniki, cheese vareniki, cherry vareniki and more. This dish is also very common in Poland, they call it pierogi and they make it pretty much the same. Vareniki are usually served with sour cream and fried onions. This recipe is the classic version of homemade vareniki and they are perfect for weekend breakfast or brunch.

Ingredients:
For the dough:
2/3 (160ml) Warm water
1/2 teaspoon Salt
2 cups (250g) Flour
2 tablespoons Oil
For the filling:
400g Potatoes, peeled
2 Onions, chopped
Salt to taste
Pepper to taste
For serving:
Sour cream
Directions:
1. Make the dough: In a small bowl, mix warm water, salt and oil. In a separate large bowl, place flour, make a well in the middle, then pour the wet mixture into the well. Mix until smooth dough is formed.
2. Set aside to rest while making the filling.
3. Make the filling: fill a medium-large pot with water, add 1 tablespoon of salt, add potatoes and bring to a boil. Boil until tender.
4. Place boiled potatoes in a large bowl and mash.
5. In a medium sized pan, heat 2 tablespoons of oil, add chopped onions and cook until golden.
6. Add 3/4 of the onions to the mashed potatoes, season with salt and pepper and mix well.
7. Assembly: divide the dough into 4 pieces. Roll each piece into a 1/8cm thick. using a glass or a cookie cutter, cut 6-7cm circles. Fill each circle with 1 teaspoon of filling. Seal the dough and repeat with the rest of the dough.
8. Cook the vareniki: boil a large pot of salted water. Add the vareniki the boiling water and boil until floats. Drain.
9. Serve with the rest of the fried onions and with sour cream.

Hacer la masa: En un tazón pequeño, mezcle agua tibia, sal y aceite. En un tazón grande separado, coloque la harina y mezcle y amase hasta que se forme una masa suave. 1:01 2. Reservar para que repose mientras se hace el relleno. 1:04 3. En una sartén mediana, caliente 2 cucharadas de aceite, agregue las cebollas picadas y cocine hasta que estén doradas. 1:26 3. Hacer el relleno: llenar una olla mediana/grande con agua, agregar 1 cucharada de sal, agregar las papas y llevar a ebullición. Hervir hasta que estén suaves. 1:45 4. Coloque las papas hervidas en un tazón grande y triture. 2:01 5. Agregue 3/4 de las cebollas al puré de papas, sazone con sal y pimienta y mezcle bien. 2:20 6. Montaje: dividir la masa en 4 piezas. Extender cada pieza en un grosor de 1/8 cm, con un vaso o un cortador de galletas, corta círculos de 6-7 cm. Rellene cada círculo con 1 cucharadita de relleno. Selle la masa y repita con el resto de la masa. 3:14 7. Cocine los vareniki: hierva una olla grande de agua con sal. Agregue el vareniki al agua hirviendo y hierva hasta que floten. Escúrralos. Agregue la mantequilla y mezclar hasta que el vareniki esté cubierto con ella. 4:07 8. Servir con el resto de las cebollas fritas y con crema agria.

    My mother immigrated from Ukraine to Montreal, Canada in 1951 and she made the best tasting and pretty Vareniki. She used to also put different types of fillings in them, potato and cottage cheese, potato and cheddar cheese, sauerkraut and even plums or cherries, yummy! Boiled Vareniki are delicious, but fried ones are even better! The ones I make are good too, but I have yet to master the way my mother used to close the Vareniki up. Thanks for sharing!

    Use some of the leftover starchy potato water to paint the edge before you fold them and they won't open when boiling them.

    VARENIKI is Russian spelling VARENYKY is Ukrainian spelling Also, save some of the starchy potato water and before you fold them over to close, dip your finger into the water and run your finger around the edges. This will ensure the dough is well bonded when closed and will not open during the boiling phase causing the filling to escape.

    I certainly care where the origins of the food are from! Verenyki are Ukrainian, kudos on ricing the potatoes, that is the true way to make Ukrainian dumplings.

    These look delicious 😋 we as Menonites do them with quark mixed with egg yolk salt and pepper, one's there cooked we put (schmant fatt) and strawberry 🍓 jam on them, and then there ready to eat° taste perfect 👌

    Who cares where this dish comes from, the author just wants to show that through food it is always easier to find peace and compromise, food is what brings people together and makes them friendlier.     Varenyky is not russian food, it's ukrainian and polish food. There are pelmeni in russia. Sometimes instead of brain.

    Varenyki is originally a Chinese dish - all products made in terms of boiled dough originally appeared from there - stop writing about it everywhere. And yes, Pierogi is also essentially Ukrainian varenyki taken by the Poles, and the dumplings themselves came from Asia. So there are no purely Polish and Ukrainian ones 😆🤡

    Varenyky have nothing to do with Russia. At all. It is our Ukrainian national cuisine. Yeah, people prepare this dish in other countries, but it doesn't make it dish from that country. Italian pasta is cooked all around the world, but it was, is and will always be Italian. Same here with varenyky.

    @@lonewolf6327 then it was the wrong way to do that. Calling originally Ukrainian dish Russian-Ukrainian, while on their website it says it's Russian cuisine (especially in the light of full-scale invasion) won't bring peace. It will just bring irritation.

    Hmm what can you say about russian origin of varenyky? I'm afraid they stole it.. It is how colonial politics work: metropole appropriates all the best that colony has. But is it really metropole's owning? Ukrainians and russians have nothing mutual - maybe only current war.. And try varenyky with cottage cheese - it's very delicious :)
