Ghost kick sidechain is basically a kick he has muted so you don't hear it, but there's still a send to a sidechain compressor on the pad so you still get a ducking effect without hearing the kick. He put on every beat because it gives the melody a light bounce and movement so the chords aren't just static notes. It's a technique you can use to add rhythm to your beats before you even have drums laid down. There's also plug-ins you can get like OneKnob Pumper that do the same thing with way less setup.
