I'm not a coder and have recently started using ACF to add Elements to our products in WooCommerce. I am using the ACF shortcode to inject the data into the Single Products Element (Kadence Pro).... is using the shortcode method a good idea ?

The shortcode method works and is a good way to get the result you want. There is no "right" or "wrong" way to do this. Blocks are using a very similar method of showing the data so if you are comfortable with shortcodes - you can continue to use them. There is no performance difference for the end page speed that I have noticed. Hope that helps you out.
