i've seen a lot of people fully expose ancient cities to the surface, but not so many attempting to terraform the land around it so the exposed city looks natural. god that'd take so much work.

It's just someone removing layers of blocks to eventually reveal an ancient city, Minecraft's new structure, embedded deep below the surface.
Did u have to dig all that put in actual Minecraft?

there is third party softwear like mc edit or world panter that allows mass world editing and chunk property manipulation there are even some programs that will alow you to export parts of a world as a mesh colider for rendering work or 3d printing

you can just replace layers with air 1 by 1 using /fill

Luckily not! 😅 Like Daniel mentioned in another comment, this is done procedurally using an external software!
