Oh! You lived in Vancouver, BC before?!?! Cool! I lived there as well and for a good long while, haha! It was a long time ago tho. Nice place and I do miss the days sometimes. I'm now working in Shanghai. I moved to Shanghai in the end of 2019 and have pretty much been stuck here. Yes, I was here during the citywide lockdown as well. Everything was disrupted but I'm slowly getting back on track. I got covid probably once but I'm not sure. China suddenly terminated the zero covid policy, and everything was in a mess. I didn't test so couldnt confirm, but it was very mild tho. Just like Uncle Roger said you get once and it's over. Absolutely not scientific, of course. Mask mandate has been lifted for quite some time now. Is mask mandate still in effect in Japan? I will be moving to London. Each and every moment here will become unforgettable memories, both good and bad. Life goes on.
I've had it once and it was pretty bad, it's strange because symptoms can be different among people. For me, it gave back and chest pains. Breathing was hard

To cheat with the oil for canned coconut milk, I'd recommend you use coconut oil. Coconut oil is available in Indian Grocery stores and I'm sure in Asian Grocery stores as well. So you reintroduce the coconut fat lost in the coconut milk. Also, making fresh coconut milk isn't hard. Buy a ripe coconut (looks brown), grate the inner edible (white) flesh, and squeeze the extract out of it using cheesecloth 🙂

I need to say this, Thai green curry is oily. Sweet and oily. it's the worst for your health but damn it tastes good. I think it's too dry though, more coconut milk should be added But well, as he used a can one without oil. that's pretty hard to make. It's an improvised version of the food.

I got covid during the first wave in 2020 and spent nine days in the hospital, almost died. After I was released I still had to use an oxygen tank for almost a month till my lungs fully recovered.
I avoided Covid. Luckily.
