    @@pauldeck4500 Yeah running restaurants like these are hard work if you work the back it's always like 10-12 hour days and if you're the owner and also work the kitchen you're probably looking at 14+ hour a day if you include all the prep work that is necessary too.

    I have done food-prep for a living before, but I have never seen one man have this much productivity in one morning. I am astonished. I always thought I was pretty good, pretty fast, but I was never even close to the precision of this fellow. Just amazing.

    Such a humble way of life and a true, honorable existence and trade! To be able to wake early everyday, prep and serve hundreds, essentially filling the belly’s of thousands, all with smiles on their faces after their meals are finished! Many Americans can’t comprehend such dedication nor ever reach such work ethic! Hats off to ya boys!

    I see the different between chinese food vs japanese food... Chinese food seems to be much oily and thick flavor (they put a lot of things inside to make it more delicious) Japanese food are simple, lighter not that much oily and they focus on 1-2 flavor (for example, if we want to eat beef ramen, they will do their best to bring out the flavor of beef without any other additional seasonings. they focus on 1 taste. they make original taste. both are delicious and healthy food.

    "Chinese food seems to be much oily...". Not all 'chinese food' are oily. It depends on which region, which province Chinese food that you saying it's much oily. There's Chinese food in some region/province which is less oily. Also you need to understand the food culture between China and Japan. In Japan it mostly is Japanese food or some influence by the Chinese. In China, it borders to many countries which some part of China has food influenced by the neighbouring countries. So saying Chinese food is much oily is not correct.

    I love how noodles get drained right onto the floor and cutting boards are rinsed also just onto the floor. There must be a floor drain and then every night they must just slop it all down the whole and bleach the floor.
