Ultimate WSM MODS/Kettle Mods/Smoker Mods

Тәжірибелік нұсқаулар және стиль

I wanted to be able to not only smoke meat but to also grill on my Weber Smoky Mountain 22.5, so this video shows how I made a very small modification by installing an extra L shaped bracket on the four main grate brackets bolted to the middle section of the smoker. Four holes were bored, one on each main bracket and through the mid section of the WSM 5 inches from the top grate. Once the brackets were installed, the new 21 inch grate could be layed down which will become the charcoal grate which will be 5 inches below the grilling grate just like most grills especially like a weber kettle. With this grilling setup, all assesories used on a weber kettle can be used on this WSM KETTLE setup in the kettle cooking mode. So, in essence, this now becomes a hybrid type smoker/grill which can be used to smoke or grill.

@@progers5019 may i add somthing that is possibly well known already, but i was quite pleased with recent results. Your Video motivatet me to think out of the box. There is that Moesta BBQ Pizza-Ring, that makes a pizza oven from a kettle grill when combined with a Pizza stone. That Pizza-Ring works perfectly fine with the bottom and the top of the WSM - just in case youre intrested. Enjoy life!

Hey Mike, I'm so glad you installed the hinge. I'm still loving it. Can't imagine having to set that lid somewhere every time I lift it open. Top needed mod, or maybe next to the extra brackets at 5 inches down so to use WSM as a grill. I appreciate you letting me know. I know you already love it. Well worth the money spent. See ya

I finally got around to doing your modification after using the original lower grate position as a fire grate for a couple years now. Now that I have the fire grate level raised to 5" I'm happier with the fire being closer to the meat. Thanks Brother Phil, Cheers!

Implemented mine much the same way you did, many of the same components. I also bought a water pan cover. Which becomes a ash catch when using as a grill. I can now grill and smoke on the same unit. Last upgrade will be the hinge for the lid. I was able to find some "L" brackets for the grill at home depot, which did not require knocking out the pins. Thanks for the ideas.

Fred Bulkley Hey Fred. This mod on the WSM puts it in a class of it's own for the money. It is not only a great smoker, but now a kettle and can make use of all weber kettle accessories, which I have many of and use all the time on the kettle and WSM. A big advantage of the WSM is the dome lid which allows more room for warming racks and extra meat, and the three levels of cooking. Glad you liked it. Go for it.

Guillermo Paredes Thanks for watching and the comments. You will love being able to grill on the smoker also. When grilling, do not use the water pan below to catch grease. It impeades the air flow enough to prevent higher temps. You can cook in it just like a kettle, and the temps will go up to 450. I'm considering adding 3 more vents about half way up the mid section so it can draw more. This will help withhigher temps and hold them longer. I think. Stay tuned

Very well thought out PHil. I have a 22" Weber kettle-grill and a 18" WSM and I have actually thought about how I would turn my 18" WSM into a grill when I need to grill 6-8 steaks at the same time. If I had a 22" SMC I would take advantage of your mod this weekend. Now just need to modify it for an 18" WSM.

I admit that some mods can be purely vain cosmetic stuff e.g. stainless steel door (which I have), but the majority of the ones I did are very beneficial. 1) lid hinge- must have (IMO) 2) side handles- must have to move the 22.5 around 3) casters- must have so you can move the 22.5 around 4) Bolted vent extensions- optional but very handy 5) extra grate in bottom inside charcoal ring- optional but useful-ext life small pieces of charcoal preventing from falling thru to bottom 6) Replacement temp thermometer on lid- Optional but better dependence, quality & visualation. 7) Grilling brackets- Not required or necessary, but this mod offers the Weber Smokey Mountain smoker to also become a grill in kettle fashion, and allows user to use all kettle accessories. At the time I did it, it cost me about $12. 8) Stainless Steel Door- Not required or neccessary, but looks good. 9) Door replacement handle- Not neccessary, but some say is better. Accessories I use- due to mod #7 except 5-7 below will work anyway 1) Weber Gourmet Grate system (center cutout for woks, grates, etc) 2) Slow n Sear 3) Drip n Griddle 4) Vortex 5) Cajun Bandit Stainless Steel expansion Ring & Rotisserie 6) Weber Original 22" Expandable Smoking Rack 7) Weber Warming Rack (2 different models)

PHIL IN FLORENCE Wow! Thank you for sitting down and putting such a detail list together! Ya know, about that stainless door being cosmetic...let me ask you this; does it seal better or do you need a gasket? One thing I do not like about the WSM is that POS flimsy door. LOL. Also, when I was smoking ham hocks last weekend I told Amy I needed to look into putting some handles on that thing. We were running a snake that was lasting about 4 hours and had to lift that thing off to extend the coals. Handles are a must! After all these years of cooking offset and nearly the past 5 straight cooking wood fire in a reverse flow, I am really looking forward to playing with the WSM, beyond what we have been using it for (smoking sausage and such). And I can’t say enough about the duality of the Kettle mod. Talk about a no brainer!

  • @progers5019

    @progers5019

    6 жыл бұрын

Exactly how I felt about the kettle mod. No brainer, I know right. The SS Door is nice, very sturdy not flimsy feeling. When I put mine on, I experienced a slight gap on top right. Some guys may not feel comfortable doing this, but even as rigid as it is, it does have some flex with a little handling and persuasion. I kept pushing in on the corner and side roll until it would lay flat up against the wall of the mid section. Turned out ok. Some guys have put gasket material or silicone around the door, but I didn't see where it was an issue in cooking. A minor puff of smoke once in a while didn't concern me. But you can do that if you want. Yea, lifting that hot mid section off without handles could be a bear. I do like the SS door. Looks very good, and it is not flimsy like the aluminum.

Phil, I did the grill mod to my 22.5 WSM back when I brought it home, tonight was the first time I used it. The 20in grate slid sideways with the chinimey on it. Almost a fail, I did find out the top grill grate from the kettle fits just fine as a charcoal grate on the wsm. I am told the charcoal grate from a 26in kettle will fit, I can't find one to put a tape on. I love not having to bend over to cook. Oh top of tab to top of tab on the mod is 6in. Also don't need a vice, I placed the shelf tab on my lineman plires and knocked the pin out just fine. Keep up the good work Miss. Phill keep him in line. Mark/Waco

Phil, while the mods are awesome as well as the video. I must add this food for thought. While you're considering adding more space for grillling you also just added another rack for even more slaps of ribs or whatever else. Now that 22 can easily hold 9 racks or ribs. Thats amazing! Hey can you possibly upload pics of that handle so we can see closer up what you are doing to hold your thermometer on. I like that idea as well.

nayfrench It's a short piece of pipe abt 1 1/4- 1 1/2 with large flat washers on each end. Something big enough in diameter for the clamp to grab. That is a piece of old vacuum cleaner wand pipe I had in my shop (junk drawer). You could use some emt conduit or a 3 inch pipe nipple. You can pick up a 1 8inch steel 5/8 bolt, 3 5/8 flat washers, 1 5/8 lock washer and a 3 inch long 1 1/2 inch piece of pipe.

Yes, Weber could make the WSM come with this feature with just adding these 3 extra brackets and 21 inch grate. But, they don't want to do that for obvious reasons. I love using it as a grill. I'll have to take a look at the Kingsford water smoker. Thanks David

That is an extremely versatile smoker you have there Phil! I'm kind of in the 'I've got a kettle right next to it' camp at the moment, i've got the SnS and DnG in my 22.5 and that's my small scale go to. I guess i'm reluctant to go drilling any more holes than i have to beyond the hinge and widening the temp gauge hole but that may change in time!

Hey Jason. I understand. I'll probably end up with a kettle too pretty soon. Just trying to decide between a 22 or 26. I have ordered several accessories for the 22 since converting my wsm to take kettle setups. I do like the extra room a 26 gives you when you use the vortex and do wings. My wsm kettle setup does good but it gets crowded when I do a lot of them. I break out the warming rack (2nd tier). Also, it's good to have the option of two grills for anything that comes up where I need to cook a lot of meat. The metal in the wsm is very tuff and drilling a few extra holes in it will not compromise it. Just be sure to apply some high temp black paint in the hole. Thanks for your comments. Phil

I admit that some mods can be purely vain cosmetic stuff e.g. stainless steel door (which I have), but the majority of the ones I did are very beneficial. 1) lid hinge- must have (IMO) 2) side handles- must have to move the 22.5 around 3) casters- must have so you can move the 22.5 around 4) Bolts added to all vent brackets to prevent burning your hand when adjusting hot vents during cook- optional but very handy 5) extra grate in bottom inside charcoal ring- optional but useful-ext life small pieces of charcoal preventing from falling thru to bottom 6) Replacement temp thermometer on lid- Optional but better dependence, quality & visualation. 7) Middle Grilling brackets added 5 inches down from top grate for an additional 21 inch grate- Not required or necessary, but this mod offers the Weber Smokey Mountain smoker to also become a grill in kettle fashion, and allows user to use all kettle accessories. At the time I did it, it cost me about $12. I love this mod more than any of them. It turns the wsm into a kettle for grilling. If you already have a kettle, it gives you a second grill for the times you need extra capacity for family cooks or large parties for burgers/dogs/chicken. Plus the high dome allows you to double up more with warming racks which actually act as smoking racks during low n slow. 8) Stainless Steel Door- Not required or neccessary, but looks good. 9) Door replacement handle- Not neccessary, but some say is better. 10) Santa Maria Grill accessory from Gabby"s Grills. Sits on top the wsm bottom section 11) Cajun Bandit WSM Wheel & Cylinder Lock Kit (added year and half later) to keep the middle section from jumping off the bottom when moving the cooker around on pavers with uneven joints. It locks the two sections together, plus it includes new casters with the kit. 12) Stack Rack mod doubles your grating system. See Joe's WSM over at Joe's BBQ House KZread Channel to see how he has 8 grate levels using the bolted stack rack system he designed. He uses the lid from the kettle, the mid section and bottom of the wsm, then also a cajun bandit extension ring. With this setup, he can stack 8 grates. You have to see it to believe it. Accessories I use- due to mod #7 except 5-7 below will work anyway 1) Weber Gourmet Grate system (center cutout for woks, grates, etc) 2) Slow n Sear 3) Drip n Griddle 4) Easy Spin Stainless Steel Grate 5) Vortex 6) Cajun Bandit Stainless Steel expansion Ring & Rotisserie 7) Weber Original 22" Expandable Smoking Rack 8) Weber Warming Rack (2 different models) 9) BBQ GURU PORT 10) Steel Heat Deflector 11) Large stainless steel charcoal basket- Arbor Fabricating 12) Stainless Steel Minion basket- Arbor Fabricating 13- Beast Basket large charcoal basket- Greg over at WOODSHED Smoke and BBQ channel.

Hey Phil, I just fitted the hinge to my WSM today, man that is going to be such a great help in our restricted garden space, i agree the best mod to make. I've also swapped out the thermometer and fitted the ss door which assisted improved air control as my stock door leaked, handles next I reckon then wheels. I'm giving some thought to your grilling brackets - have you used yours in this capacity since you got your kettle? Great videos as always my friend, thank you for being a bbq inspiration

like the video and appreciate the thoughts as I am WSM owner and user also. Yet that being said, your low side has to much air space under it to mimick a kettle. I beleave it would mimick the kettle more accurate for the low and sear proccess by eliminating the barrle section and fire ring. by putting your sear accessory on the coal rack and then the rack you will have mimicked the low side cooking of the kettle just by putting the lid on the bottom section without the barrle section. just an idea that I have used with great results. Grilling is all about trying, thats why we do it. Appreciate the video.

Donald, I'm just now seeing your post while searching for something. I apologize for not Answering. I'm sure you already made decisions on a grate. I have an easy spin ss, and also the Weber Gourmet grate. I don't have the Craycort but have seen other channels use it. They all have their particular benefit. I love the easy spin due to being stainless steel and spins around the kettle without catching. Good when searing steaks. Love the WG with the removable center. Good for use with many accessories including the vortex. The Craycort is Cast iron and very durable. Can have griddle on half which is useful. Only one choice, probably go with Weber Gourmet. Maybe by now there is a stainless steel version. Thanks and good luck with your kettle.
