🍜BROTH: The broth includes shoyu, kelp, pork for richness, and most importantly, niboshi (dried boiled fish - sardines or anchovies).
NOODLES: The broth is typically prepared first due to the amount of time it takes to prepare. The fresh noodles are boiled for a short period and placed in a bowl separately from the broth. The toppings go in last, on top of and into the broth.

🍜ZENTORO MABOMEN (SPICY TOFU RAMEN): You need douban (fermented broad beans and chili paste) and douchi (fermented black beans) to make this dish. It’s meant to be spicy and almost sticky. There should also be minced pork. Add thick ramen noodles to the mabo-dofu dish.
🍜SANRATANMEN (HOT AND SOUR RAMEN): Black pepper, red peppers (tougarashi) and a sourness from vinegar come together in the broth. Toppings include wood ear mushrooms, bamboo shoots and tofu. Thinner noodles are used here.
🍜CHICKEN RICH RAMEN: They use high-grade chicken with a lot of collagen. The broth is comprised of several vegetables, which are blended into the thick and creamy chicken broth. Add some lemon for acidity.

In addition to the standard egg, green onion, kamoboko (fish cake), and seaweed toppings, they sprinkle on fried garlic. The noodles are thin and straight.

I’ve lived in Japan for four years and I remember finding my favorite ramen shop ever in Meguro. I’ve had hundreds of different ramens at this point and this chicken broth ramen (being I believe my second ramen I’ve ever tried) has always been the best. The combination of the broth with the noodles and toppings were perfect for me and I screamed when I saw that you guys covered it in the last ramen shop. It’s amazing and I always recommend it to anyone. To think I found that place by accident with my friend while we were waiting for another friend who was running really late.

3,000 - 4000 Ramen Shops in Tokyo alone?! That's like 1 ramen shop a day for 10 yrs! And there is still Sapporo, Fukuoka, Yokohama, Nagasaki, etc... If I win lotto, I gotta at least stay there for 5 years and try to taste them all. :)

yer right. tried atleast 2 dozen ramen shop in Japan (Tokyo, Nara, Osaka, Niseko, Chitose) its mind boggling to think how many ramen shops esp if you happen to pass by a single Street in Tokyo..but of that 4000 shops, you might encounter some band wagoners Ramen shops...

Do you know what's illegal? Many people just eat the noodle, not drinking the soup and all let them throw away, especially in North America. The soup is where all the hardwork is.....and people just not finishing it.

Hi Sonny, I've recently found your channel and it has become compulsive viewing in my house and I'm working my way through your back catalogue. I recently watched an episode where you mentioned that you were over 300lbs at one point and how you turned your life around and I want to say that you are an inspiration to me as I'm 6ft1 and 360lbs and have changed the way I eat and see myself after watching your show. It all starts with diet! As long as you are in a caloric deficit you will lose weight, but I do recommend walking as well. I recommend looking at Mike Rashids losing 100lbs series for motivation. Good luck!

The slurping gives SO much extra flavour to the dish! It is not just for effect. Sonny slurps a bit messy, but the effect is the same. And, it is a compliment to the chef, or so i am told.

@@JozlynMoon They say it's just a habit that they picked up from young cuz their parents and many other people do it, and they never questioned it. Some are taught from young that slurping is rude, or they find that it's rude when they grow up because the soup is more likely to spray when slurping, but non-slurpers are the minority here. I live here, and every single Japanese person I've asked says that the "it shows respect to the chef" thing is bullshit they've never heard of that until they get asked by foreigners.

We finally have some places that serve pretty good ramen in my little rural city and I'm so happy. It's so much work to make it at home and source the ingredients that I prefer to just eat out. I only wish we had more authentic variety and crazy twists. All of these dishes looked so freaking good.

Ann Wong I felt the same! Also very handsome and hot. But I find Bekruz a lot warmer. We miss him so much, don’t we?

Omg I was In Japan last year in May and Frank was our Airbnb experience's ramen tour guide. Very cool.
now i must put ramen in tokyo on my bucket list .
