What type & brand of uke do you recommend for an adult beginner?

You have many options! I really like Sound Smith Gear. I have a few of their ukuleles. My favorite is the Ebony tenor ukulele. Cordoba also makes a great ukulele called the Cordoba 15CM. Either way I recommend a tenor size

Right. The tenor is tuned the same as the soprano.

why do almost all other tutorials show strumming the strings where the neck joins the body rather than over the sound hole as you do?

I can’t speak for other musicians. However, you can strum wherever you want based on preference. I assume that most people play on a soprano ukulele and it’s small and just naturally causes you to strum over the neck area since the body is so short. I play on a tenor which is much larger. I hope this helps!
