Ukrainian Cottage Cheese Pancakes - Delectable and Easy to Make!

This video demonstrates two recipes for Ukrainian Cottage Cheese Pancakes (in Ukraine they are called “syrnyky”) - one with flour and one with semolina. These pancakes are easy to cook and they make a simple breakfast and a delectable dessert when served with sour cream, fruit or jam. Ingredients:
* 400 g cottage cheese
* 2 tbsp flour (recipe # 1) or semolina (recipe # 2)
* 1 egg
* 1 tbsp sugar
* 15 g vanilla sugar
* 50 g raisins
* Salt to taste
* Flour for dusting
* Vegetable oil for frying
* 20 g unsalted butter
Instructions:
1. Combine cottage cheese, an egg, sugar, flour or semolina, salt, and raisins in a bowl. Mix well with a fork. Don’t use a blender or food processor; the mixture will become too melty when you cook syrnyky.
2. If you use semolina, leave the mixture to rest for 10 minutes until the semolina swells.
3. Dust a cutting board with flour. Place the dough on the board and roll it into a loaf of oblong shape.
4. Cut the loaf into several slices of equal size.
5. Fine-tune the form slightly with both hands, making the edges round and perfect.
6. Preheat the skillet, reduce the heat to medium and add a tablespoon of vegetable oil. Place syrnyky in the skillet and leave them on one side for about a minute. With a spatula, flip syrnyky over and fry the other side for 30-45 seconds.
7. Transfer the pancakes onto a plate lined with a paper towel to absorb excess oil.
8. Bake to perfection for about 10 minutes in the oven. Alternatively, you can place them back on a clean and slightly greased with vegetable oil and butter skillet, close with a lid and cook over slow heat for 5-10 minutes until they are ready from inside.
9. Serve warm with butter or sour cream.
