Ube Halaya Recipe Using Frozen Grated Ube | Purple Yam Jam | Filipino Christmas Food Staple

Ingredients:
454g or 1 packet of frozen grated ube / purple yam (thawed)
1 tin coconut milk
1/4 cup white sugar
1 tin evaporated milk
1 tin condensed milk
ube flavouring (optional)
3/4 cup grated cheese
100g butter

Yes it takes a long time to cook it but it's worth it. I actually haven't tried ube cheesecake but next year I'm hoping to do more baking videos like that. 😊

If I’m going to use it for ube crinkle cookies should I omit the cheese?

The cheese doesn't really make the ube salty for my taste but if you prefer it not to have that cheesy taste, you can definitely skip or lessen the amount of cheese. 😊
Maybe calibrate instead of full cans of evap and coconut milk, i wonder if its shld just be half half. Its too runny.

Depends on your taste really. Personally, 1 tin is more than enough. Hope it worked out well for you.

I'm actually not sure because when I make it, it doesn't last for very long. But I'd say a week at least.

I've never tried to keep it na hindi nakaref. I would recommend keeping it in fridge kasi it has milk.

When buying Frozen Ube, the best brand so far I have used is TROPICS brand. NEVER buy a knockoff from a Vietnamese brand. It is not the same as the Filipino grated Ube root crop. Also, to bring more purple color to your Ube halaya, use the "Sweet Cow" brand Ube condensed milk. It is really dark purple. LOL!! Your ube will look so good you need that food coloring. And last but not least cook it a non-steak skillet. It will evaporate the liquidity in your ube. You did not reach the consistency yet. You should be able to see like a volcano lava when it's cooking from your pan.
You forgot the cheese ??
I'd either freeze it so it's like ice cream or put some whipped cream on it.
