Buy big pork shoulders, they're usually like 4-7 lbs, but cheap. Roast them "blind" aka just salt and pepper for like 4 hours, this keeps their flavor profile neutral. At the end, it's pull apart tender and you can use the base meat in literally anything, tacos, soups, chili, eggs and sauce etc etc etc. Great economical way stretch out a 20 dollar piece of meat.

Trick for trimming intermuscular fat from a flat-ish roast like this: sear it before cutting. You'll get really deep color on both sides without having to do it in batches, and as the meat starts to cook it firms up and pulls back from the fat, making it a lot easier to trim out all the gristly bits. Saw Kenji do this for beef stew once and it was an epiphany for me. 3 pounds of chuck in a single pan without having to worry about fond burning between batches? Yes please!

Gizzards are a nice cheap meat too. Though they can take some tedious cleaning if it wasn't done thoroughly enough where you got them- Differently colored bitter skin(?) might be on there, and bits of what seems like the chicken's food. Long cooking is needed too, but the amount of excess cooking they can take makes thighs look delicate. The broth from boiling them is gelatinous enough to solidify in the fridge.

Personally I wish it was viable to hunt just one deer around here, but the area I live in is too dense to safely do that despite having plenty of deer causing trouble without predators. That's like enough meat for six months.

Awesome video Adam! I was wondering, would you like to make a video about sushi? Like a way to make it easier, or more affordable, or something like that

I respect responsibly sourced meat, even though I am a vegetarian. Hope there will continue to be plenty of meat-free recipes (or such that can be adapted) in the future.

Completely different use of the two meats, but great ones! I would've cut the chicken breasts to butterfly and make chicken schnitzels to go with the potatoes. Then just have braised or baked chicken with your oven dish and you still have the bones for the soup. Just some ideas. Great video anyhow!

One thing that my family does is make a big pot roast (pork) in the slow cooker, then with the leftover meat the next day add a jar of marinated Napoli (cactus) and fire roasted green chiles aswell as a whole jar of green salsa, and let it hook all day, and that’s Chile verde meat, best served with Spanish rice

Learning to use as much of an animal as possible is probably the best thing Adam does in youtube. And it's probably the best thing you can do to your food habits.

Everyone always says to save your cooking fats, bacon etc. but how do you store them, and how long for? And can you just add new fat to old fat? And what about mixing fats that you're saving? Adam/someone, help!

My 2 cents..... small containers, a piece of paper and a rubber band so you can write down what fat it is and the date and easily fix it to the container because you'll forget, you're human! And also if you're wanting to add more fat to the container you'll know if it's from a week ago or a month ago - in which case I wouldn't. I think a month or two is easily ok in the fridge - if it's pure fat it won't go off and use your nose!! My family historically used to render lard and use that for MONTHS when there was no refrigeration and that was the only cooking fat they could get. As for mixing fats.......never tried it but mixing say bacon and duck fat I think would be worth trying and would make fabulous roast potatoes. Hope this helps! Cheers
