Turkish "Katmer" Layered Flat Bread - No Yeast - Easy Method

Turkish Katmer is a famous flatbread made in stovetop in a pan or griddle. It is a rich bread with butter and has no yeast. With an easy unique technique, we create layers inside the bread which makes unresistible delicious :)
Katmer Layered Flat Bread Ingredients: (12 small size katmer bread)
1 cup water
1/2 tsp salt
about 2 to 2+1/4 cup flour
For the butter layers:
2 heaped tbsp butter (60 gr)
4 tbsp olive oil (in total I used 75 gr. butter-oil mixture)
1 heaped tbsp flour
a rolling pin

    Hi, greatings from Macedonia. :) I found your channel looking for Turkish recipes. I love Turkish cuisine because our Macedonian cuisine is very similar to the Turkish. Other than the Balkan cuisine, the Turkish is the most similar. I remember my father telling me that in the village were he was raised there were a lot of Turkish residents. He says that the Turkish women sometimes will go to his mother and bring her some cooked food that they had made because they were very poor. They were even teached her how to cook and how to make these Turkish breads like pogacha and the like.

    Merhaba Ayşenur bacı... I made Katmer today. It tastes delicious. I omit the recipe by adding 1 cup of all purpose flour and 1 cup of whole wheat flour. In Pakistan we called it paratha. Lots of love from Pakistan 💕🇵🇰🇵🇰

    Im from mauritius island we call it farata or layered roti. We use oil or margarine or ghee (its a thick fat removed from milk) for the layers, and some people mix that with the flour for layers or just use lots of flour when they roll the fough thin. We dont cook the flour butter mixture here. For the sweet version since we never had tahini here, people just either oil/magarine/ghee and sugar.

    Ramadhan Mubarak. We have this in East Africa and we call it chapati but instead of butter/oil with flour we usually spread either oil or margarine or both and sprinkle flour b4 folding it. I will try making butter, oil and flour. Looks neat as well ... يسلمك يداك

    As salamu alaykum sis! Delicious and yummy! I make this all the time too, I will try the sweet version! You can also put honey on top just in case you don’t have Tahini around!     I never have seen (Village) Turkish people (family/friends/neighbors)making this. In my country the Turkish community is very large and are from all over Turkey. I like to discover new things. It’s a lot of work and I think that Turkish people prefer to make Lachmacun or Gözleme from dough than you have a whole meal, instead a part of the meal 😉 I know it as Paratha we eat with meat/chicken curry and Dhal. I love Turkish dough dishes but my generation can’t make it busy with studies and work. Sometimes Iam afraid that some dishes will disappear 😞

    Many people are commenting that it’s called paratha in India and Pakistan. But I learned some more tips from this recipe that I will use in my parathas. Especially putting the logs in the fridge to harden the butter and make better layers. We don’t do that with parathas. This recipe is like a paratha and also croissant. I’m going to try it with whole wheat flour.

    You are absolutely dumb if you have to just wonder about that. Many of the nonsense from Northern India came from 900 years of Islamic (Persian and Turkish) invasions. And they also took a lot of advanced math, science etc from India back to their countries.

    If you are desperate for yeast, you can make it at home by capturing it from air and feeding the starter. The way to do it is shown here on KZread. Will take 5-7 days but you will have the yeast culture for a lifetime.
