Try using auto breaks to assist you in the speed and be easy on the controls, if you keep on trying you should get the hang of it.

Just turn on auto brakes and set roll and pitch low if you are using tilt.

Can you autopilot your way docking with the tanker? I've tried to do it manually but I just miss the c-4 because I overshoot the probe a little and when I slow down to regain some distance I also descend...

You should switch on autopilot and use the direction, speed and height buttons. It's great if you have shaky hands

Click any plane (you must have it) after that click fuel related and then it should say refuelable in flight
