딸기를 통으로 넣어 굳힌 딸기 샤를로트 케이크를 만들었어요~
큼직한 딸기가 많이 들어있어서 그런지 크림에도 딸기 향이 나서 딸기 우유를 먹는 것 처럼 부드럽고 맛있더라구요~^^
안에 핑크와 화이트 두가지 색의 층으로 굳혔는데 핑크색이 연해서 눈에 확 보이지는 않지만 딸기가 없는 부분에는 사랑스럽게 보이네요~~
위에는 딸기를 치즈케이크 반죽에 눌러 고정한 다음 투명한 젤리층을 만들어 주니 조금 더 신비로운 느낌이 나는 것 같아요~
크림치즈를 사용해 만들어도 되지만 마스카포네 치즈가 더 순하고 부드러워서 딸기와 잘 어울리네요~~
색감도 예쁘고 딸기도 잘 돋보여 예쁜 케이크인 것 같아요~~

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
달걀노른자 2개
설탕 10g
바닐라익스트랙 2g
머랭 (달걀흰자 2개 + 설탕 40g)
박력분 50g
판젤라틴 5g
마스카포네 치즈 150g
설탕 60g
플레인요거트 85g
바닐라익스트랙 4g
60% 정도 휘핑한 생크림 210g
딸기
물 120g + 설탕 25g + 판젤라틴 3g
▶레시피
1. 댤걀노른자에 설탕과 바닐라익스트랙을 넣고 섞은 뒤 머랭을 2번에 나눠 넣고 섞는다.
2. 박력분을 체 쳐 넣고 섞고 짤주머니에 담고 오븐 팬에 팬닝하고 슈가파우더를 뿌린 뒤 190도 예열된 오븐에서 8분 정도 굽고 식힌다.
3. 식힌 시트를 모양을 맞춰 자르고 틀에 넣어 준비해둔다.
4. 판젤라틴을 차가운 물에 넣고 10분 정도 불린다.
5. 마스카포네 치즈에 설탕을 넣고 섞고 플레인 요거트, 바닐라익스트랙을 넣고 섞는다.
6. 불린 젤라틴의 물기를 꼭 짜고 전자레인지에 10초 정도 돌려 완전히 녹인 뒤 치즈 반죽에 넣고 섞는다.
7. 60% 정도 휘핑한 생크림을 넣고 섞은 뒤 다른 볼에 조금 덜고 레드 식용색소를 조금 넣고 섞어 핑크 반죽을 만든다.
8. 틀에 핑크 반죽을 붓고 딸기를 넣은 뒤 냉장실에서 20분 정도 굳힌다.
9. 하얀 반죽을 붓고 딸기를 올린 뒤 냉장실에서 30분 정도 굳힌다.
10. 물, 설탕, 판젤라틴을 섞은 액체를 굳은 치즈케이크 위에 붓고 냉장실에서 3시간 정도 굳힌다.
▶Ingredients
2 Egg yolks
10g Sugar
2g Vanilla extract
Meringue (2 egg whites + 40g sugar)
50g Cake flour
5g Gelatin sheet
150g Mascarpone cheese
60g Sugar
85g Plain Yogurt
4g Vanilla extract
210g Whipped cream (whipped up 60%)
Strawberry
120g Water + 25g Sugar + 3g Gelatin sheet

Oooooo looks good the only thing I would change would be to take out all of the leaves and replace them with mint and attach mint sprigs to the strawberries to mimic the leaves cause picking out the strawberry leaves seem like a nightmare

The minty leaves look good, but the taste? The sweet cream maybe goes well with something more umami. I'd love to add up some more fruit slices like blueberries and pansy flowers etc.

I do this too! I love baking but sometimes it can be stressful trying to find a time when the kitchen is peaceful at my house. These videos are ultimate relaxing baking.

헐.. 진짜 이번 케이크는 진짜 보자마자 와...했네요💓 케이크들은 모양이 다 비슷비슷해서 디자인이 독특하면 굉장히 눈에 띄고 맛있어보이는데 쿠킹 트리님은 이걸 잘 살라시는것 같아서 보기에 넘 좋답니다 ^^ 😄❤❤ 매번 실력이 늘으시는거 같아요. 오늘도 잘보고 갑니다 ~

속을 크림과 통 과일로 꽈악 채울 수 있다는게 샤를로트 케이크의 큰 장점 인 것 같아요 게다가 쿠킹트리님 진짜 다 잘드시는것같아요.. 딸기 꼭지까지..

어버이날을 맞이해서 만들어 봤는데 생각보다 예뻐서 사진을 이리찍고 저리 찍고 넘 예쁘더라구요 크림도 달지 않아서 가족들과 아주 맛있게 먹었어요 좋은 레시피 감사해요^^
