    My husband and I have been on Keto for 18 months, lost weight, lost fatty livers, and serious joint pain. I’m 72 and he’s 76. We feel great and can now work out as well. We do time restricted eating so we normally only eat one meal around 5 pm and I prepare all our meals with fresh ingredients. One of the things we missed was Italian meals with pasta. Once I discovered Cappella’s pasta in the freezer section, we haven’t looked back. We’ve made wonderful lasagna, chicken/shrimp fettuccine Alfredo and penne pasta with red sauce and meatballs. The noodles take 1min 45 seconds to cook, so they are the last thing I cook. While there are some carbs, it does not cause us to go over our amount in a day. I have fixed these meals for young families in our church who just had babies but are gluten intolerant. Took the meals and package so they know what is out there. Also, you don’t even cook the lasagna noodles before backing. As long as you don’t over cook the noodles you will think you are eating the real thing!

    Love you ladies! The purpose of vodka in the sauce is for the same.reason you would add wine to a sauce, just without the stronger flavour that could distract the shining and intended flavour. Meaning it to be dominant. The alcohol allows the sauce to bind smoother, giving a creamer texture. I actually just learned that a few weeks ago! Haha

    I think it might also grab a lot of flavors out of the shallot/tomato paste and then disperse better in the cream. It's like the alcohol extracts extra flavor.

    yup... any time You use an acid to deglaze the pan, which You always want to do 😍, it adds a depth & richness to the recipe that makes the difference between food & Excellent food!!

    If you actually want to mimic the pasta water - you need to add a keto friendly starch to the salted water. The point of adding the pasta water to the sauce is to help thicken the sauce slightly and to help the sauce adhere to the noodles better.

    I learned from watching Alton Brown in Good Eats awhile ago that tomatoes have fairly complex flavors, that are carried in water, oil, and alcohol, so their full, complex nature comes out when there's a little of each involved in cooking them. Since learning that, I started making sure to add just a touch of red wine (Montepulciano d'Abruzzo, 1 net carb per 5 oz. serving), and it really does make a difference. And, with the carbs in that wine so low, I can sip while I cook!

    Hi! They actually add pasta water to the sauce because of the starch from the pasta :) helps bind the sauce and also makes it thicker

    Seems to me, when I have done it, that adding the water makes it waterier. Not thicker. Maybe it’s just me.

    I hadn't heard of these noodles, so thanks for testing them out for your tribe! An idea...instead of adding water with salt (which is just for the starch anyway), you could use salted butter. 🙂 Love you girls...thank you for always keeping it light and making me laugh! 💞

    Potatoes are no longer the enemy! Cook and cool potatoes to convert them to a resistant starch. They may not be strictly keto, but they will be low carb! I just skip the processed, packaged 'Keto' stuff and stick with meat, fish, seafood, eggs, some dairy, and tons of veggies. I often stir fry sliced cabbage and onions as a sub for noodles. Also good in soups, stews...

    I guess I'm the only one who likes konjac noodles. I open pkg thoroughly rinse & put in a hot pan to dissipate the liquid. I use it for red pasta sauce. Last night I added to a Korean beef dish & it was excellent. Once I add to a sauce there is no weird flavor & takes on the flavor of the sauce.

    Late to the party - but . . . The reason they add pasta water is not for the salt, it is for the starch in the water from the pasta. This helps to thicken the sauce and helps it to adhere to the pasta better. Next time mix a little arrowroot powder with the water to get a similar effect. Sorry if this is a repeat of another comment.

    Huge vodka sauce fan here...Although its subtle the vodka does add flavor and just as an FYI the primary purpose for adding pasta water is for the starch that seeped out of the pasta and thickening, so really on keto the water isn't necessary (then just salt to taste)

    I totally HATE the Healthy Noodles; guess that’s why there are more options. I like the noodles made from Ann at Keto Asian Flavors, but it’s a bit of work, and I don’t use that many noodles on a weekly basis. These sound like the same noodles in a small premade package. This could be a winner! 😉

    @@floatingmoon5778 I figured they were close to heavenly fan noodles. I wonder if hers could be stored someway? I think I remember they can be stored in the liquid for quite some time? Wonder if they freeze and thaw well. But also it wasn't easy getting consistent thin noodles lol. But would definitely be cheaper. Especially since I have all the ingredients already.

    I made the Keto Asian Flavors recipe from scratch, and it was arduous and gummed up my squeeze bottle til I almost wanted to toss it. Cleanup was a whole operation. The pasta, however, was great, and based on that alone, I just bought these off Amazon. If this brings vermicelli back into my life, keto is forever.

    Me, too. I made the Keto Asian Flavors noodles twice - I call them 'weird alchemy noodles' - and they're just not worth the hassle in my opinion. I keep searching for the best home made noodle recipe and have yet to find one that really hits all the right marks. They're either too crumbly or too spongy. 😒 If these are good, then I'll break the bank every once in a while to enjoy pasta again.

    @CookingwithMel has a recipe called Zero Carb Noodles in 5 Minutes using sodium alginate and calcium lactate. Her recipe is for a smaller portion and she used a blender cup to mix all of the ingredients at the same time. Mel set a timer in her video to show it only takes 5 minutes. She also explained variations of different flours and liquids you can use such as broth, milk, almond flour, chicken flour, etc. Also, how to store them in the freezer. I've made them twice and each time was quick, simple, and tasty.

    I had heard of these and already had ordered and tried them through Amazon. They are my go to noodle if I decide I want pasta. This allows me not to conduct the science experiment noodle making - which I think I have done three times now and it makes entirely too much for me to ever eat...so I end up throwing it away. Glad that this is now in small packs and we can purchase it. 🙂 I am going to have to give the Vodka sauce a try!

    Thank you! I ordered these immediately after watching. They arrived quickly, and I have to say they are onecof the best pasta substitute I've tried. They are a little soft (not aal dente), and you have to really drain all the liquid it comes in, but it just soaks up the flavor of the sauce and gives you those great pasta vibes!

    So, love y’all, btw. Been following for years. Anyways, the addition of pasta water is usually for the residual starch left over in the pasta water…it helps make a sauce while thickening at the same time. Since these noodles don’t have any starch, I’d have thought to maybe use a little less water but your recipe seems to have worked out just fine. Thanks for another great recipe

    The pasta water is used instead of regular water, because the pasta starch in the water acts as a thickening agent.

    Noodle revolution has replaced my chosen noodle. Made spaghetti and meat sauce with vermicelli noodles. 1 lb ground meat with 1 jar sauce needed 3 pouches making 4-5 meals. Supply is low in Amazon. Was able to order ramen sized noodle from supplier directly. Will now try immi ramen as pasta noodle and new version of spaghetti noodle.

    I have to try Noodle Revolution. Right now I use Miracle Noodle which I really like, but when you have a BM, don't be afraid, it's just the noodles don't digest, they come right out.

    I have just started using these noodles (Noodle revolution) when I don't feel like making the ones from "Keto Asian flavors" which I love but they are time consuming to make. The Noodle revolution ones taste exactly the same to me. They are very easy and that's nice when you don't have a lot of time.

    Sooo glad you found this! I cant do grain - even worse than needing to avoid gluten. And noodles have been my waterloo. I breakdown (probably girl hormone driven) about once a month and end up itchy for 3ish days as a consequence. Cant wait to try these. Thanks for showing the way! 😂

    Usually you add alcohol to tomatoes to bring out some flavors in the tomatoes that are alcohol soluble. Bluntly? It makes the tomatoes more tomatoey. Also, you add pasta water to add some starch (from the pasta) into the sauce to help with thickening.

    Konjac rice, konjac noodles, kelp skinny noodles is what I use. Not an egg based noodle but used to it now.

    I have tried over a dozen different kinds of noodles so far. The one that I found to be most like regular noodles is Carba Nada Roasted Garlic noodles. They have 12.5 grams of carbs per 28 grams of noodles so portion control is important, but it's worth it to actually be able to enjoy that pasta taste and texture!

    The pasta water is added to incorporate the starch that comes off of the pasta which helps the sauce stick to the pasta when everything is combined. I loved this video and will definitely try the pasta. 💕

    I ordered some of these a few days ago and I will not be receiving them until the middle of November! This happens all the time with Keto stuff that tastes good and is low in carbs. Thanks for reviewing them. I am not really big on red sauces but I loved noodles(pre Keto) with cheese or butter on them. So that is what I will be doing when I finally receive them! :)

    Try kelp noodles! They have them in the refrigerated area in Korean markets. Pretty tasty when prepared correctly

    @@Dtabshere not sure which noodles you mean. These are usually found refrigerated with other seaweeds. They might even be in a different section from shirataki noodles. The noodles are clear and crunchy, but become soft like vermicelli if massaged with baking soda and lemon juice. The kelp noodles are called cheon sa chae (천사 채)

    @@Dtabshere if you soften them, they are exactly like glass noodles and absorb flavor well, but if you don't then they are quite crunchy (people make cold noodle salads with the crunchy texture). They aren't rubbery like how shirataki noodles are

    Pasta water has starch in it, so regular water doesn’t really work. The starch would be a thickener.

    I've had these numerous times; they have to drain really well for the sauce to stay on. If you order the 6 pack it comes to only $3.99 per service (yes still kinda high but if you REALLY want spaghetti..................)

    About three years ago found the company called Great Low Carb Bread Co. 2 ounce portion is 7 carbs can be a lot for some, I would add more than 1/4 pound of beef low carb vegetables it was a good amount and I thought it taste wise so far the best low carb pasta around. Three years ago for my budget it was expensive at around $9-$10 for 8 ounce package NOW its going over at $14.99 maybe can be found cheaper than at Amazon but it you get the 4 pack it's $40. I love the the stuff and helps when I really want pasta but its it very expensive ingredients: Pea Protein isolate, Oat Fiber, Wheat Fiber, Egg Whites, Wheat Gluten and Semolina.

    I've made these at home, and they are super low carb and good, but girl, I am a huge fan of someone mass marketing something that I normally have to make by hand. I've already bought a mega pack. I really try to stay away from any grains because they flare my A.I. pain. I am filled with the same happiness today as when I learned that Cloudies were on the market and I could buy as clean a product as I would have made at home. So much easier and portioned out. YAY.

    Alcohol is a solvent that releases volatiles that are not fat or water soluble, so it actually releases new flavors into the sauce you cannot get other ways.

    Supposedly the vodka is added to give the consumer a sense of euphoria..... a heightened eating experience! So oh good! Another alternative for pasta! Yay! Thanks Ladies! And oh darn! Amazon is out of both styles and says it does not know if it will be back in stock!

    The vodka adds a bite to the sauce( hard to discribe) but i love the kick alcohol gives to foods ( rum soaked fruitcake anyone?) i know......🍸🍹🥃

    Got these finally. They're like spaghetti wo flavor but that's ok. I just used Raos mushroom and sausage sauce grated parm, mozzarella & shaved parm. It was just like spaghetti! Pricey but worth it. I'm gonna try other recipes. TY!❤

    Here’s a noodle I want to warn you about: hearts of palm. Apparently many people can eat them, no problem. And I have no known allergies, however, I was “deathly ill” and nearly drove myself to the ER in the middle of the night because my husband was out of town. I googled and some other people have had the same problem, but obviously a lot of people have not. Please just try a small amount even though the carbs and calories are very low. Please do not overdo if you try it. Good luck.

    QUESTION FOR THE TWINS: I have not seen anything growing in your hydroponic tower for quite sometime and today the basil (cute hat BTW) was cut from garden outside. Did the hydroponic system now work well?

    It works really well, but it does take a lot of tending to. (Cleaning, pruning, changing our seedlings etc) We’ve had a lot going on this year and kept pushing off refilling it, maybe we will start once the weather turns in Chicago lol
