I believe crab shells are soft right after they molt. I've never tried them but having had regular steamed crabs, I can tell you the ones that are just about to molt will have the most meat in them. The way you can tell (at least with blue crabs) is if there's a dark color in various areas of the crab.

@Tj Kirby yeah, and some people eat crayfish without deshelling them. You can, but I don't know why you would willingly compromise the flavor. Shells have a bitter taste. As do the gills of crab and the head with its organs. Yes, the entire crab is edible, but so is the entire fruit of any kind. We choose to take off the bitter skins just like we choose to take off the bitter face and gills.

You go ahead and do your "chicken fried american fried fatty gross deep fry" crab, and we will do our seafood right. We will use our cultural recipes and you can use your American "recipes". As to your how to, cut off the head and get those organs in it out, cut the edge of the apron off, flip the top part of the soft shell over and cut the gills on one side, and flip the next side over and cut those gills off too. I didn't think a crabber wouldn't know how to take the gills out of a crab.
