    In James Beards' cookbook and autobiography, Delights and Prejudices, he uses sweet onions for this recipe, and the insides spread with sweet butterr. These were served at cocktail parties by his catering company. They were a big thing in the 1950's. Try again using a sweet onion if available in Korea.

    It tastes like "Summer" and filled with nostalgia. Over 5 decades ago my grandmother made these for me as a kid in Eastern Europe. Even the green edge, but because we couldn't waste precious food there were no "round" shenanigans, just trimmed crusts. 😢😍

    Jacque Pepin is the man, his onion sandwich is a great Video. I have watched it too. On a side note, Jacque Pepin was always on PBS on KCET (create) in my 20's when I lived in Los Angeles. They also played classical music in the evenings. The rare good use of government funds.

    it's a tea sandwich, so yeah, I've seen lots of them (and this one is fantastic). cute little cut-out sandwiches rolled in herbs are super-nice. I like sweet onions for this particular one and chives are extra-good, but there's nothing wrong with parsley! Jacques Pepin is the man.

    Sandwiches don't need to have cold cuts/meats all the time. A little veggie/fruit sandwich with mayo hits from time to time. Tomato and Onion is my favorite mix. I do dab in the occasional cucumber with pickle. You just gotta find the right mix that suits your palette. Pretty good as a thrifty struggle meal in those college days, too.

    I always make Tomato sandwiches with mayo, onion, oil/vinegar, and feta cheese 😋 sometimes an avocado goes in as well

    Tried this today and yes it’s really good and different. Jacque also made another sandwich using same technique, but with thinly sliced radishes and salted butter.

    ever since i got a higher resolution monitor i been wishing you uploaded in 1440 or 4k. this sandwich looks kinda crazy but i bet i'd like it. as far as the wasting of bread is concerned yk i'd just eat the crust or more likely just leave it on there

    I saw Jacques video on this a while back and wanted to try it...but still have yet to do so. I did however try his recipe for Anchovy Pasta & that was so good. I make it all the time. Gunna have to try this one out now.

    i'd definitely use the crust as breadcrumbs, stores forever when dried out. You could even use the exact same ingredients/leftovers for some fried onion. Onions rings -> cover with batter (mayo, parsley, salt) -> cover with breadcrumbs -> throw it in the pan or deep fryer

    I recommend everyone try to do delicious things with crusts when they cut them. Fry in butter and dip in roasted garlic or spaghetti sauce with lots of melted cheese, dip in hot butter then slather on some jelly. Tons of ways to use it!

    I think the white bread is important to the combination of taste. I’ve had this before and the combination of mayo, sweet onion and white bread makes a nice combo.

    My grandmother used to make these back in the 80s. I'm almost certain she used the Pepin method but she also sliced them into smaller bits and the mayo and butter did a lot of the heavy lifting taste-wise. I know I'm tasting nostalgia but they were great when she would use yellow onions and mayo (though, Kewpie probably hits better) and she'd use soft butter around the sides to line the sandwich with parsley. I hated onions back then when I was a kid, but I would devour those things whenever she made them.

    Lol I'm from the southeastern US and I grew up watching my brother eat sweet onion, mayonnaise, and mustard sandwiches. It's basically how we would make fried bologna sandwiches minus the bologna. I have grown to love onion as I've gotten older, but still not enough to make an entire sandwich with it lol.

    Next time use the whole slice bread...add more onions and Mayo the edges so you can get parsley on it. Even consider adding parsley on top of the onions too.

    Made this today. Been wanting to try this ever since watching Jacques’ video on it. Absolutely delicious! I used chives and loved it. Gonna try parsley next. I also went pretty thick with the onion and it was perfect!

    FUN FACT: The famous onion sandwich was created by James Beard and his business partners Bill and Irma Rhode. While experimenting, they initially used a darker bread and schmaltz. To enhance a luxurious mouthfeel, they opted to use brioche and mayonnaise. The "frosting of parsley" was actually James' idea. Bill took the credit for this sandwich without ever mentioning James, as a big F U, James decided to introduce the onion sandwich in his very first cook book, "Hors D'Oeuvre and Canapés: With a Key to the Cocktail Party". He sensationalized "some French hostess...for these tiny bits of flavor" for the creator of this sandwich. 😂
