Please after cutting to the shape you want what do you do with the leftover dough? Can you put the pieces together and roll again until the dough is finished or it will activate gluten and so you discharge the pieces?

Sister Hilda, I realized you don't you wrap the dough in a cling fill and refrigerate it. so I guess it's ok to roll the dough without refrigerating it...

You shouldn't add sugar. Otherwise it will be sweet pastry. No sugar egg and milk beaten to wash off the glare after bake. I don't like fish pies.
